1 (8 ounce) package cream cheese
4 tablespoons butter
2 cups powdered sugar
12 ounces Cool Whip
1 teaspoon vanilla flavoring

Steps:

  • (Note on the Cool Whip -- It tasted just as good if you add more Cool Whip. So if you like, adding more cool whip will work).
  • Add cream cheese and butter to bowl and mix till well blended together. (I like to use my KitchenAid mixer!).
  • Add powdered sugar a little at a time until well blended.
  • Add vanilla while the powdered sugar is mixing.
  • Add Cool Whip to the mixture.
  • Now you are done. It goes well with many different cut up fruits. I haven't tried it with low fat cream cheese or low fat Cool Whip yet. When I do I will post my results. I hope you enjoy this as much as my family enjoys it!

½ cup white sugar
¼ cup water
¼ teaspoon lemon juice
⅛ teaspoon salt
½ cup sifted confectioners' sugar
1 egg white
⅛ teaspoon salt
1 teaspoon vanilla extract
2 (8 ounce) packages cream cheese, softened

Steps:

  • Combine white sugar, water, lemon juice, and 1/8 teaspoon salt in a thick-bottomed pot; bring to a boil, stirring often. Reduce heat to low, place a cover on the pot, and cook at a simmer for 3 minutes. Remove cover and continue cooking, stirring often, until the sugar and salt dissolve into the liquid, about 3 minutes more. Remove pot from heat and set aside to cool for 5 minutes; pour syrup into a large bowl.

1 (11 ounce) can mandarin oranges (drain and reserve the juice)

Steps:

  • Bring all ingredients to room temperature FIRST!
  • Whip the cream cheese and marsmallow together, then fold in the drained mandarin oranges.
  • Check the consistancy: if it seems thick to you, then add the reserved juice, 1/4 tsp at a time. I prefer my topping thicker, like a dip, so I only add 1/4 tsp juice.
  • If you are going to mix it into the fruit salad, then you would want it thinner.
  • I also prefer to put it in the fridge (covered with saran wrap) overnight. Enjoy!
