CINNAMON BUN PANCAKES WITH MAPLE CREAM CHEESE GLAZE

- Preheat the oven to 200 degrees F. Set a baking rack on a baking sheet and put it in the oven.
- For the glaze: Put the cream cheese in a bowl. Heat the maple syrup in a small saucepan over low heat until it just begins to simmer, then pour over the cream cheese and whisk vigorously until smooth. Set aside and keep warm.
- For the cinnamon swirl: Melt the butter in a small saucepan until light golden brown. Whisk in the muscovado sugar and cinnamon; the sugar may clump and separate from the butter¿don't worry. Whisk in 1/4 cup water and bring to a simmer, whisking until the mixture smoothes out. Simmer until slightly thickened, about 2 minutes. Whisk in the cream and simmer another 2 minutes. Transfer to a small bowl to cool--the mixture will thicken as it cools--then transfer to a piping bag with a small tip.
- For the pancakes: Whisk together the flour, sugar, baking powder, baking soda and salt in a large bowl. In a medium bowl, whisk together the buttermilk, 3 tablespoons melted butter, eggs and vanilla. Add the wet mixture to the dry and whisk until just combined.
- Heat a large nonstick pan or cast-iron griddle over medium heat and brush with some melted butter. Ladle about 1/4 cup of the batter into the pan and spread to make a 4-inch circle. Ladle in a few more pancakes, being careful not to crowd them.
- When the pancakes just begin to form bubbles on the surface, pipe in the cinnamon swirl filling: Starting at the center of the pancakes, squeeze the filling on top in a swirl (just as you see in a regular cinnamon bun). Continue cooking until larger bubbles begin to appear, the surfaces are somewhat dry and set, and the bottoms are light golden brown, about 2 minutes--adjust the heat as necessary so the bottoms don't brown before the tops set. Flip over and continue cooking until golden brown on the reverse side, about 1 minute longer.
- Transfer the pancakes to the oven to keep warm while you make the rest of the pancakes.
- To serve: Stack 3 pancakes on each plate, drizzle with some of the maple cream cheese glaze, and sprinkle with pecans.
BLUEBERRY CREAM CHEESE SCONES WITH YOGURT GLAZE

- For the scones: Preheat the oven to 400 degrees F. Line 2 baking sheets with parchment paper and set aside.
- Add the flour, granulated sugar, baking powder, salt and lemon zest to a food processor and pulse to combine. Add the butter and pulse until it's mostly pea-sized; a few larger chunks are okay. Dump the mixture into a large bowl and gently toss in the blueberries.
- In a medium bowl, whisk together the eggs, yogurt, vanilla and almond extract. Pour into the dry ingredients and, using a rubber spatula, mix until about 80 percent of the dry mixture is incorporated. Dollop teaspoon-sized plops of cream cheese all over the mixture, then gently fold the mixture just until the remaining dry ingredients are incorporated. (You want the cream cheese to generally stay intact but it will of course swirl a little.) Using an ice cream scoop or large spoon, divide the dough into 8 balls and place them on the lined baking sheets about 2 inches apart (they will spread quite a bit). Bake until the tops are lightly browned and the bottoms are golden, 16 to 20 minutes.
- For the glaze: Meanwhile, whisk together the powdered sugar, yogurt and salt in a bowl.
- Let the scones cool on the baking sheets for 5 minutes, then transfer them to a wire rack to cool for 5 more minutes. While they're still a little warm, brush with the glaze, then sprinkle with the sanding sugar, if using. These are best enjoyed the day of.

- Grease three 8 or 9-inch round cake pans and line with parchment paper.
- Stir together first 4 ingredients in a medium sized bowl.

- Place a 12-cup muffin tin on the middle rack in the oven and preheat the oven to 400 degrees F.
- Add the eggs and granulated sugar to a blender jar and mix on medium speed until light yellow. Add the 1 cup warmed milk and blend. Add the flour, cinnamon, and salt and blend until smooth.
- Use a pastry brush to grease the hot muffin tin generously with the melted butter. Add any remaining butter to the batter and pulse to blend. - 1. Preheat the oven to 350 degrees. Line a 12 tin muffin pan with liners.
- 2. In a medium bowl, whisk together flours, sugar, baking powder, baking soda, pumpkin pie spice, and salt.
- 3. In a large bowl, combine pumpkin, egg, canola oil, applesauce, buttermilk, and vanilla. Mix until smooth.
- 4. Gradually incorporate the dry into the wet ingredients in batches. Be sure NOT to overmix! Overmixing results in dry muffins. You should still have a slightly lumpy batter, as seen in the above photo.
- 5. Fill each muffin liner 3/4 of the way full.
- 6. Now, prepare your streusel. Combine sugars, cinnamon, and nutmeg in a small bowl. Add in melted butter and then add flour in batches - working the mixture with your hands until all is incorporated. The end result should be crumbly.
- 7. Add streusel evenly over unbaked muffins.
- 8. Bake for 23 - 25 minutes until a toothpick inserted in the center comes out clean. Allow muffins to cool completely.
- 9. To prepare the glaze: beat softened cream cheese with confectioners' sugar and vanilla. Add milk, one Tbsp at a time, until the right consistency is achieved.
- 10. Using a spoon, drizzle evenly over cooled muffins. Refrigerate to retain freshness if not serving right away.
- 11. Note: If you're concerned about the extra calories in the toppings, you can make the muffins "naked". They are actually quite healthy and clock in at less than 200 calories a serving. But, in my (muffin) opinion: Go Streusel or Go Home!
