1 tablespoon olive oil
1 medium onion, chopped
4 cloves garlic, minced
3 tomatoes, diced
1 cup chopped fresh spinach
2 cremini mushrooms, chopped

½ teaspoon salt
¼ teaspoon ground black pepper
¾ cup heavy cream
¾ cup milk
½ cup finely shredded Italian cheese blend

Steps:

  • Heat a nonstick skillet over medium-high heat. Cook and stir sausage in the hot skillet until browned, about 10 minutes.
  • Heat olive oil in a large pot over medium-high heat. Add onion and garlic; saute until the onion is translucent, about 5 minutes. Reduce heat; add tomatoes, spinach, mushrooms, basil, salt, and pepper. Bring to a simmer, stirring as needed.
  • Combine cream, milk, cheese, and flour in a bowl. Add to the tomato mixture and return to a simmer. Stir occasionally until reduced, about 15 minutes.

  • Preheat the oven to 375 degrees F (190 degrees C). Spray a medium or large casserole dish with cooking spray.

1 lb salmon fillet
paprika
4 ounces cream cheese, softened
2 teaspoons garlic, minced really fine
1/2 teaspoon parsley
pepper (to your taste)
1/4 cup onion, chopped very fine
fresh Baby Spinach
olive oil
garlic powder

Steps:

  • Preheat oven to 400. Spray a 9x9 baking pan with olive oil. Place salmon fillets in pan. Sprinkle lightly with paprika.
  • In a small bowl, mix together the cream cheese, minced garlic, parsley and a sprinkle of pepper. Spread this over the salmon fillets. (I usually micrwave this for 20 to 30 seconds to make it easier to spread).
  • Sprinkle the chopped onion evenly over the cream cheese.
  • Layer the baby spinach leaves evenly and neatly over the onions (I make 4 layers of leaves).
  • Spray or drizzle the spinach leaves with olive oil. Sprinkle lightly with garlic powder, salt and pepper.
  • Cover tightly with foil and bake 25-35 minutes depending on the thickness of your salmon. It takes a little longer than usual because of all the toppings.

The marinade:
2 large boneless skinless chicken breasts, cut horizontally
8 oz cream cheese, softened
2 cup spinach, rinsed
1 tablespoon olive oil
4 oz Mozzarella cheese, shredded
3 cloves garlic, minced
1 tablespoon olive oil
1/2 teaspoon red pepper flakes, optional
1/2 teaspoon Italian seasoning, optional

Steps:

  • Add olive oil, garlic, Italian seasoning, and red pepper flakes into a Ziplok bag along with 1 teaspoon of salt and ½ teaspoon black pepper. Seal the bag and shake until mixed. Add the chicken breasts, seal, and massage so the chicken is covered in the marinade, set aside for 10-15 minutes while you prep the remaining ingredients. Position a rack in the center of the oven and preheat the oven to 400ºF (200°C). 2. Quickly wilt the spinach in a skillet with 1 tablespoon olive oil, set aside. 3. 3 -4 slices bacon, rind removed
80 g frozen spinach

Steps:

  • Grill bacon until well-cooked, but not crispy. If you do this on a rack above an oven tray, much of the fat will drip away. The time will vary according to the type of bacon. Cool bacon for a few minutes, then chop into very small pieces.
  • Microwave frozen spinach according to directions on the package. Drain any liquid.
  • In a medium sized bowl, mix all the ingredients together until well-blended, then transfer to a nice serving bowl.
  • Cover with glad wrap and cool in the fridge. If you can prepare this a few hours ahead of time, the flavours will intensify, but it is fine straight away.

1 tablespoon butter
4 eggs, seperated
nutmeg, freshly grated

Steps:

  • Preheat the oven to 400 degrees F (200C). Line a 9x13-inch shallow-sided baking sheet with waxed paper to extend slightly up the sides.
  • Place the spinach in a pan with just the water that clings to its leaves after washing. Cook over moderate heat until tender: 7-10 minutes. Drain.
  • Put the spinach, butter, and egg yolks in a blender, and work until smooth. Transfer to a lare bowl, and season with nutmeg, salt, and pepper.
  • In a separate bowl, shisk the egg whites until they are stiff. Fold the egg whites into the spinach mixture using a metal spoon, then pour the spinach and egg-white mixture into the prepared pan, smoothing it to the edges.
  • Sprinkle 2 tbsp of the Parmesan cheese over the roulade. Bake the roulade until just firm and spongy in the center: 12-15 minutes.
  • Place a piece of waxed paper large enough for the roulade next to the oven, and sprinkle it with the remaining Parmesan. Remove the waxed paper that was used to line the pan from the top.
  • Place the pepper under a hot broiler, shiny side up, until the skin blisters and turns black. Allow to cool. Tear off the papery skin, and remove and discard the stalk and seeds. Cut into strips.
  • Beat the cream cheese with enough milk to make it spreadable, then cover the roulade with it. Arrange the red pepper over the top in widel spaced stripes, then roll up the roulade from one of the short sides.
  • Place the roulade with the seam underneath so it cannot unroll. Trim the ends, and if desired, sprinkle the top with freshly grated Parmesan.

1 1/2 cups milk
1 cup flour
1 bunch scallions, trimmed and minced

1 to 2 tablespoons vegetable oil
1 pound cream cheese, at room temperature
1 tablespoon grated lemon rind
1 tablespoon fresh lemon juice

2 teaspoons Hungarian paprika
12 ounces smoked salmon, in thin slices

  • Squeeze the spinach to drain out all excess moisture. Set aside. Place the eggs and milk in a bowl or food processor and beat until well blended. Blend in the flour until smooth. Add the spinach, scallions, half the dill, the cayenne pepper, salt and pepper and blend until very smooth. Stir in the water and allow the batter to rest for 15 minutes.
  • Heat a seven- to eight-inch crepe pan over medium-high heat. Brush with oil. Pour about one-third cup of the batter into the pan, tilting the pan to coat the bottom evenly. Fry about two minutes, until lightly browned, turn the crepe over and cook about 30 seconds longer. Remove the crepe from the pan and repeat with the remaining batter, making 10 to 12 crepes.
  • Beat the cream cheese until light and fluffy. Add the lemon peel, juice, shallots, remaining dill, capers and paprika. Spread each crepe with some of this mixture, then cover with a layer of smoked salmon. Roll each crepe jellyroll fashion and wrap in plastic wrap. Refrigerate at least two hours.
  • Trim the uneven ends off the rolls and slice each into rounds 1/2-inch thick. Chill until ready to serve.

1/4 cup whole milk
1 bunch fresh spinach
1 small yellow onions or 1 small shallot
1/4-1/2 teaspoon ground nutmeg
4 tablespoons butter
4 ounces cream cheese, at room temp
1 tablespoon fresh lemon juice
1/2 teaspoon fresh lemon zest (optional)
salt and pepper

Steps:

  • Wash spinach leaves well-remove stems and slice leaves very thin; set aside.
  • Whip the cream cheese with lemon juice and zest if using; set aside.
  • Dice onion or shallot; set aside.
  • In a large skillet over medium heat melt 2 tbsp of the butter.
  • Add the spinach and onion and sauté for 3-5 minutes. You want the onion slightly translucent and the spinach wilted. Remove from heat and pour into a bowl; set aside.
  • Melt the remaining 1-2 tbsp butter in the same pan over medium heat.
  • Whip the eggs well with the whole milk and pour into the hot pan.
  • Allow eggs to cook slowly, allowing eggs to almost set completely.
  • Pour 1/2 the cheese mixture over 1/2 of the omelette, add the spinach onion mixture; sprinkle on the nutmeg, salt and pepper, and the remaining cheese.

  • Preheat the oven to 350°F
  • Blend the cream cheese and spinach in a large bowl.
  • Add the garlic, nutmeg, and salt
  • Spray a baking dish with non-stick spray

1 pint grape tomatoes
2 tsp. extra-virgin olive oil
1 bag (3 c.) prewashed baby- spinach leaves
2 tsp. bottled minced garlic
1/2c. half-and-half or cream
1/4c. grated Parmesan cheese, plus more for garnish

Steps:

  • Bring 21/2quarts lightly salted water to a boil in a covered 4 1/2-quart Dutch oven or soup pot. When the water reaches a rapid boil, add the pasta and cook until tender, according to package directions. While water comes to a boil and the tortellini cooks, make the sauce: Chop the bacon into small pieces and set aside. Slice the tomatoes in half and set aside. In an extra-deep 12-inch skillet with a lid, heat the oil over medium heat. Add the bacon and the prewashed spinach to the pan and cover. Cook, covered, for 1 to 2 minutes, then toss, cover and cook for an additional minute or until the spinach just wilts. Add the garlic and tomatoes and stir and cook for 1 minute. Reduce heat to low and add the half-and-half. Heat on very low until the pasta is ready. (Do not boil the sauce or it will curdle.) If the sauce becomes too thick, add up to 2 tablespoons of pasta water and stir well. Drain the pasta and add it to the pan. Sprinkle the Parmesan cheese over the tortellini and toss with the sauce. This easy to make, delicious vegetarian lasagna is layered a bit differently than your ordinary lasagna. The idea for it comes from the cookbook "comida vegetariana" published by trident press, but we have modified it a bit to suit our taste even more. I hope youll enjoy it as much as we did! You can also easily veganise this by using a vegan cream cheese, non-dairy milk and opting out of the cheese or using a soy cheese.

1 tablespoon oil
3 medium sized carrots, chopped
2 medium onions, chopped
2 garlic cloves, minced
680 g passata (you can also use your fav pasta sauce and omit seasonings)
1/4 teaspoon fresh ground black pepper
1/4 teaspoon sage, dried
1/8 teaspoon chili powder
1/2 bunch parsley, chopped
2 tablespoons oil
2 tablespoons flour
500 ml milk, warmed (as a vegan use non-dairy)
1/4 teaspoon fresh ground black pepper
1 laurel leaf, dried
1/4 teaspoon sage, dried
250 g frozen chopped spinach, defrosted and drained
200 g cream cheese (low-fat is fine, as a vegan use a vegan brand)
1/4 teaspoon garlic powder
1/4 teaspoon black pepper, freshly ground
1/8 teaspoon nutmeg
2 tablespoons blue cheese, crumbled (as a vegan opt out of this)
1 teaspoon psyllium, husk ground (or use flax seeds)
8 sheets whole wheat lasagna noodles
1 cup cheese, grated (use your favourite, as a vegan opt out of or use soy)

Steps:

  • For the tomato sauce heat the oil in a large frying pan. When it's hot, add the chopped vegetables and the garlic. Sautee until lightly browned (about 5 minutes).
  • Then add the passata or pasta sauce and seasonings if using. Simmer for 10 minutes, then set aside.
  • For the white sauce heat the oil in a pot. When it's hot, add the flour stirring vigorously using a wire whisk for about 2 minutes or until flour is nicely browned.
  • Add a small portion of the warm milk and stir to combine. Add the remaining milk little by little stirring after each addition.
  • Season, reduce the heat to medium-low and simmer for about 10 minutes or until thickened. Set aside.
  • For the cream cheese spinach layer combine all ingredients in a large bowl.
  • When your're ready to assemble the lasagna spread a bit of the tomato sauce in a large casserole dish (mine holds about 5 l/5 quarts). Top with two lasagna sheets and then half of the remaining tomato sauce. Top with another 2 sheets of lasagna and then the remaining half of the tomato sauce.
  • Then add another 2 sheets of lasagna and on top of that the spinach cream cheese spread.
  • Cover with another 2 lasagna sheets, pour over white sauce and top with grated cheese (if using).
  • Place in the preheated oven and bake at 180°C/350°F for about 30 minutes or until bubbly and nicely browned (you might need to cover it after 20 minutes if it gets too brown).
  • Remove from the oven and allow to set up for 20 minutes before cutting.
  • Enjoy!
