2 cloves garlic (minced)
½ yellow onion (minced)
2 cups chicken broth (divided)
2 large avocados (pitted and peeled and cut into cubes)
1 tbsp lime juice
¼ cup cilantro leaves
salt and pepper (to taste)
½ cup heavy cream

Steps:

  • Add garlic and onions and ¼ cup of chicken broth to soup pot and bring to medium high heat. Cook garlic and onions until garlic is lightly browned and onions are translucent.
  • Add in remaining chicken broth, avocados, lime juice and cilantro. Bring to a simmer and cook 5-10 minutes, until all the flavors come together. Season with salt and pepper, to taste.
  • Pour soup into blender. Blend until smooth. Add in cream and blend slowly just until cream is incorporated.
  • Serve soup immediately. If desired, garnish with fresh slices of avocado, cilantro, and a swirl of sour cream.

3/4 teaspoon black pepper, divided
1/4 cup chopped tomato
1/4 cup chopped yellow bell pepper
2 tablespoons chopped scallions

1 tablespoon butter
2 cans (14-1/2 ounces each) chicken broth
2 medium potatoes, peeled and cubed

1 quart chicken stock
2 avocados - peeled, pitted, and chopped
½ cup white wine
1 lime, juiced

2 small ripe avocados
2 cups vegetable or chicken broth
1/3 cup thinly sliced green onion, white and pale green portions
1/4 cup freshly squeezed lime juice
2 tablespoons tequila
Few dashes Tabasco
Salt
Slivered green onion tops, for garnish (optional)
Roasted Poblano Cream
1 poblano chile
3 tablespoons sour cream
1/4 teaspoon ground cumin
Salt

Steps:

  • To make the soup, peel, pit, and coarsely chop the avocados. Purée them in a food processor with 1/2 cup of the broth, the green onion, lime juice, and tequila, scraping down the sides as needed. With the motor running, add the remaining broth. Season to taste with Tabasco and salt. Transfer the soup to a large lipped measuring cup or bowl and refrigerate for at least 2 hours.
  • To make the roasted poblano cream, roast the chile under the broiler until the skin blackens, turning occasionally to roast evenly, 10 to 15 minutes total. Put the chile in a plastic bag, securely seal it, and set aside to cool. When the chile is cool enough to handle, peel away and discard the skin. Remove the core and seeds and chop the chile.
  • Put the chopped poblano in the food processor with the sour cream, cumin, and a pinch of salt. Process until very smooth, scraping the sides once or twice. Transfer to a small bowl and refrigerate until you are ready to serve.
  • To serve, pour the avocado soup into tall shot glasses or espresso cups of about 1/4-cup capacity and top each with a small spoonful of the poblano cream. Top the cream with a pinch of green onion slivers and arrange on a tray to serve.

2 jalapeno chiles, stemmed, seeded if desired, and minced
4 to 5 ripe Haas avocados, peeled and cut into chunks
1-quart chicken stock
1/2 cup crema, creme fraiche or sour cream
1/2 cup chopped cilantro
2 tablespoons freshly squeezed lime juice
Corn and Tomato Garnish, recipe follows
2 ears corn, roasted or boiled, kernels cut off and reserved
2 Italian Roma tomatoes, seeded and diced
2 scallions, washed and sliced into thin rings
1/2 teaspoon salt
1/4 teaspoon pepper
1 tablespoon crema, creme fraiche or sour cream

Steps:

  • Heat oil in Dutch oven over low heat; add onions, garlic, jalapenos, salt and pepper and cook, stirring, 10 minutes or until translucent. Add avocados and stock and bring to the simmer. Simmer 15 to20 minutes or until avocados are soft. Add cream, bring back to a simmer, then puree with immersion blender until very smooth. Ancho Cream
1 large dried ancho chile*
1/4 cup whipping cream

Steps:

  • For soup:
  • Combine 1 cup vegetable broth and next 3 ingredients in processor; blend until smooth. Add remaining 1 1/2 cups broth and blend. Transfer to large bowl. Stir in cream. Cover and refrigerate at least 1 hour and up to 1 day. Season to taste with salt and pepper.
  • For ancho cream:
  • Stem chile, halve, and remove seeds. Heat small skillet over medium heat. Add chile and toast pieces on each side until pliable and aromatic, turning occasionally, about 2 minutes. Transfer chile to small bowl and add hot water just to cover. Soak until soft, about 30 minutes. Drain water; transfer chile to mini processor and purée. Strain ancho purée into small bowl, pressing on solids. Place whipping cream in another small bowl; whisk in 1 tablespoon ancho purée. Chill ancho cream until ready to use.
  • Do ahead: Can be made 1 day ahead. Cover and refrigerate.
  • Ladle soup into 6 bowls. Drizzle ancho cream over and serve.
  • *Ancho chiles are dried poblanos. They are available at some supermarkets, at specialty foods stores, and at Latin markets.
