1/4 cup flour
1/2 teaspoon pepper
1 teaspoon salt (to taste)
2 cups milk

1 (10 3/4 ounce) can cream of mushroom soup (reduced sodium works great)
0.5 (5 ounce) can whole milk
1 tablespoon butter
1/4 teaspoon white pepper
toasted bread (Rye is great but white is traditional)

Steps:

  • You may want to rinse the beef in cold water to reduce saltiness and dry in a paper towel.
  • Shred the beef into small pieces and cook over medium heat for 3 minutes in butter.
  • Add mushroom soup, milk and white pepper.
  • Simmer for 3-4 minutes and serve over toast.

1/4 cup unsalted butter
1/4 cup flour
1 cup fat-free low-sodium chicken broth
2 cups 2% low-fat milk
1 tablespoon dried parsley

  • Cut or tear dried beef into small pieces. Soak dried beef pieces in very hot water for 10-15 minutes to remove excess salt. Drain, squeezing out as much water as possible.
  • Meanwhile, stir up your favorite baking powder biscuits and get them in the oven.
  • Melt the butter in a 2-quart saucepan. When the butter is bubbly, add the flour and stir constantly for 2-3 minutes to cook the flour.

3 tablespoons unsalted butter, plus more if needed
Two 8-ounce top sirloin steaks
Kosher salt and freshly ground black pepper
1 1/2 cups sliced cremini mushrooms
1/2 cup diced yellow onion
3 cloves garlic, chopped
2 tablespoons all-purpose flour
1 teaspoon English mustard, such as Coleman's
1 cup milk
2/3 cup chicken broth
1/2 cup stout beer or Madeira wine
1 tablespoon Worcestershire sauce
2 tablespoons chopped fresh parsley, plus more for garnish
4 slices thick-cut country bread

Steps:

  • Heat the butter in a medium skillet set over medium-high heat. Sprinkle the steaks with salt and pepper and sear on both sides, about 2 minutes per side for medium rare. Set aside to rest for 5 to 10 minutes.
  • Heat the same skillet over medium heat and add more butter if needed. Add the mushrooms, onions and garlic and cook until the onions are translucent and the mushrooms "weep," or release water, about 5 minutes. 1 (12 ounce) jar dried beef
4 green onions
2 tablespoons flour
1 pint milk
5 -6 slices toast

Steps:

  • Cut the beef and onions very fine.
  • Melt the butter or margarine in a large skillet. First add onions for 1-2 minutes then add beef.
  • Sprinkle the flour over the mixture and stir well to cook the flour and melted butter,be sure it doesn't stick or burn-stir constantly.
