CREAMED RED AND WHITE PEARL ONIONS WITH BACON

Creamed Red And White Pearl Onions With Bacon image

This recipe came to The Times in 2003 from Barbara Lynch, the owner and chef of No. 9 Park in Boston. It is incredibly rich, and remarkably good. If you don't have time to blanch and peel the onions, feel free to use frozen pearl onions in a pinch.

Provided by Amanda Hesser

Categories     side dish

Time 25m

Yield 6 to 8 servings

Number Of Ingredients 10

2 8-ounce bags red pearl onions
2 8-ounce bags white pearl onions
2 1/2 ounces (2 strips) thick-cut bacon, diced ( 1/2 cup)
2 tablespoons butter
2 shallots, minced
1 garlic clove, minced
1 1/2 pints heavy cream
1/2 teaspoon salt
1 cup fresh bread crumbs
2 tablespoons chopped parsley

Steps:

  • If red and white onions are about the same size, bring a large pot of water to boil over high heat. Add onions and blanch until skins loosen slightly, about 5 minutes. Drain. (If white onions are considerably larger, blanch onions separately, increasing time on white onions by a couple of minutes.) Let onions until cool enough to handle, then trim and peel. Set aside. (Onions can be blanched, peeled and trimmed ahead of time. Place in 2-quart zipper-lock bag and refrigerate until ready to use.)
  • Sauté bacon in a Dutch oven over medium heat until crisp, about 5 minutes. Transfer to paper-towel-lined plate and set aside. Pour off bacon fat. Melt butter in Dutch oven over low heat until foaming, add shallots and garlic and cook until translucent but not browned, stirring frequently, about 3 minutes. Add heavy cream and salt. Simmer, stirring often, until cream is thick and golden and has reduced by half, 15 to 20 minutes. Stir onions into cream to heat through.
  • Heat broiler. Turn onions and cream into a shallow 1 1/2-quart casserole dish. Top with bacon, bread crumbs and parsley. Place under broiler and cook until crumbs are browned and dish is bubbling, about 10 minutes.

ROASTED STUFFED ONIONS WITH BACON AND HERBS

Roasted Stuffed Onions with Bacon and Herbs image

Provided by Food Network Kitchen

Time 2h30m

Yield 6 servings

Number Of Ingredients 14

6 large yellow onions (about 4 pounds)
4 slices bacon (about 3 ounces), diced
1 sprig fresh thyme
1 sprig fresh rosemary
1 sprig fresh sage
1/8 teaspoon kosher salt, plus to taste
Pinch sugar
Freshly ground black pepper, to taste
1/4 cup white wine
1/4 cup heavy cream
3/4 cup grated Gruyere cheese (about 3 ounces)
2 teaspoons Dijon mustard
1 tablespoon unsalted butter, plus for buttering the dish
1/3 cup fresh breadcrumbs

Steps:

  • Peel the onions, but leave the root end intact. Pour about 2 inches of water into a large saucepan and set up a collapsible steamer inside. Steam the onions until easily pieced by a knife, about 30 minutes. (For more tender onions you may steam them a little longer; however, they might be somewhat harder to hollow out. Either way they're delicious!) Set aside to cool. Slice off about a third of the top portion of each onion. Using a paring knife, cut out the insides of each onion, leaving about 4 outside layers intact, to make a container for stuffing. Chop the onion insides and tops. Preheat the oven to 400 degrees F. Heat a large skillet over medium-high heat. Add the bacon and cook, stirring, until crispy and the fat has rendered, about 3 minutes. Add the chopped onion, herb sprigs, 1/8 teaspoon salt, and sugar. Season with pepper and cook, stirring occasionally, until lightly browned, about 12 minutes. Add the wine and cook until dry, scrapping the bottom of the skillet with a wooden spoon to get up any browned bits, about 2 minutes. Stir in the cream and remove from the heat. Remove and discard the herb sprigs. Stir in the cheese and mustard. Lightly butter a baking dish. Season the inside of the onions with salt and pepper, and spoon the stuffing into each onion cavity, mounding it slightly on top. Set the onions in the dish. Heat the butter in the skillet. Add the breadcrumbs and stir until they absorb the butter. Spoon the buttered breadcrumbs on top of each onion. Roast the onions until well browned and heated through, about 40 minutes. Serve warm or at room temperature.

Tips:

  • Use a variety of onions: Different types of onions have different flavors, so using a mix will add depth and complexity to your dish. Red onions are sharp and pungent, yellow onions are mild and sweet, and white onions are in between.
  • Don't overcrowd the pan: When cooking the onions, make sure to give them enough space so they can caramelize properly. If you overcrowd the pan, they will steam instead of brown.
  • Cook the onions low and slow: Caramelizing onions takes time, so be patient. Cook them over low heat for at least 30 minutes, or until they are golden brown and tender.
  • Season the onions well: Don't be afraid to season the onions generously with salt, pepper, and other herbs and spices. This will help to bring out their flavor and make them more delicious.
  • Use good quality bacon: The bacon in this recipe adds a lot of flavor, so it's important to use good quality bacon. Look for bacon that is thick-cut and has a good amount of marbling.
  • Chop the bacon finely: When cooking the bacon, chop it into small pieces so it will render evenly.
  • Use fresh herbs: Fresh herbs add a lot of flavor to this dish, so be sure to use them if you can. If you don't have fresh herbs on hand, you can use dried herbs, but they will not be as flavorful.
