Creamed scalloped onions are a classic side dish that is both simple to make and incredibly flavorful. This dish is made with layers of thinly sliced onions that are smothered in a creamy sauce and then baked until tender. The result is a dish that is both rich and savory, with a hint of sweetness from the onions. Creamed scalloped onions are a perfect accompaniment to any roasted meat or poultry dish, and they can also be served as a main course when paired with a salad or soup.

CREAMED ONIONS
This is my absolute favorite dish that my mom makes. The onions have a mild sweet flavor, and there's plenty of the rich creamy sauce. The sweetness makes a nice complement to the Peppered Beef Tenderloin. -Denise Bitner Reedsville, Pennsylvania

Steps:
- Preheat the oven to 350 degrees F. Brush a shallow 2 1/2-quart baking dish with butter. Put the potatoes in a large pot. Whisk the cream, flour, bay leaf, nutmeg, 1 teaspoon salt and 1/4 teaspoon white pepper in a bowl, then pour over the potatoes. Cook over medium heat, carefully stirring occasionally, until the cream just comes to a simmer, about 12 minutes. Continue to simmer, adjusting the heat if necessary and stirring to prevent the bottom from scorching, until the potatoes just begin to soften, about 5 more minutes.
- Transfer the potato mixture to the prepared baking dish; discard the bay leaf. Set the baking dish in a roasting pan and add enough water to come about halfway up the sides of the baking dish. Bake until the potatoes are tender and golden brown, about 1 hour. Remove the baking dish from the water bath and let stand 10 minutes before serving.

- If you're short on time, you can speed up the caramelization process by slicing the onions thinly or chopping them into small pieces.
- A splash of white wine or vinegar can help to deglaze the pan and add a touch of acidity to the dish.
- Fresh herbs like thyme or rosemary can add a delicious aromatic touch to the creamed scalloped onions.
- For a creamy and flavorful sauce, use a combination of butter, flour, and milk. You can also add a touch of heavy cream or sour cream for extra richness.
- Season the dish to taste with salt, pepper, and other spices or herbs as desired.
- Garnish the creamed scalloped onions with fresh parsley or chives before serving for a pop of color and flavor.
