CREAMY ASPARAGUS PASTA

Creamy Asparagus Pasta image

In this quick pasta dinner, umami-rich seaweed stars twice: first, in the form of dasima (dried kelp), which seasons the pasta water and sauce with seaside savor; second, as gim (roasted seaweed), which lends deep nuttiness and some salty crunch, too. The pasta finishes cooking in a blush of heavy cream and a splash of the dasima broth, transforming into a dreamy emulsion balanced by rice vinegar. In this recipe's final moments, a rich glug of sesame oil glosses the chewy rigatoni and echoes the toasted flavor of the gim, which sings.

Provided by Eric Kim

Categories     weeknight, pastas

Time 30m

Yield 4 servings

Number Of Ingredients 12

20 grams gim, often labeled as roasted seaweed
2 (4-inch) squares dasima or kombu (dried kelp)
1 tablespoon kosher salt
1 pound rigatoni
1 1/2 cups heavy cream
1 small red onion, halved and thinly sliced
2 large garlic cloves, finely grated
1 teaspoon freshly ground black pepper, plus more to taste
1 teaspoon rice vinegar
1/2 pound asparagus, thinly sliced at an angle
1 tablespoon toasted sesame oil
Flaky sea salt, for serving

Steps:

  • Fold the gim in half and, with very sharp kitchen shears or a chef's knife, slice into thin strips. Set aside for serving.
  • In a large pot, combine 1 dasima square with 8 cups cold tap water. Bring the water to a boil and season with the kosher salt. Tumble in the pasta and cook for half the time the package tells you is al dente. Reserve 1 cup of the pasta water. Drain the pasta, then add it back to the pot. (Discard the dasima.)
  • Add the remaining dasima square, cream, red onion, garlic, black pepper and reserved pasta water to the pasta. Bring to a boil over high heat, then immediately reduce the heat to a gentle simmer. Stirring occasionally, cook the pasta until the onion-infused cream has thickened significantly, thinly coating the noodles, 4 to 5 minutes.
  • Turn off the heat. Add the vinegar and asparagus, and stir to combine for 1 minute. The residual heat from the pasta will gently cook the asparagus to tender-crisp. Stir in the sesame oil and season with more black pepper, if desired. Divide the pasta among serving dishes, discarding the dasima, and shower with the reserved gim and sprinkle with flaky sea salt. Serve immediately, before the gim wilts and turns soggy.

Provided by SuperSpike

Categories     One Dish Meal

Time 20m

Yield 2 serving(s)

Number Of Ingredients 21

4 ounces pasta, use a short pasta like rotini or 4 ounces penne
8 ounces asparagus, pencil thin and cut into 1-inch lengths
1/2 teaspoon salt
1 quart water
8 ounces salmon fillets
1/4 teaspoon dill
1/4 teaspoon lemon pepper
1/8 teaspoon salt
heavy duty aluminum foil
cooking spray
1/3 cup nonfat dry milk powder
2/3 cup water
1 tablespoon cornstarch
1 teaspoon Dijon mustard
1/2 teaspoon dry dill weed
1/8 teaspoon onion powder
1/8 teaspoon garlic powder
1/4 teaspoon pepper
1/2 teaspoon salt
1 teaspoon light butter
1 teaspoon lemon juice, fresh

Steps:

  • Turn on your broiler and set your upper rack to the middle position. Let it preheat 5 minutes.
  • Set 1 qt of water to boil in a medium pot.
  • Take a 12" wide section of heavy duty foil and fold into thirds and then fold over the edges by 1/4"- this is what you will bake the salmon on (who doesn't like easy cleanup?). Spray the foil with a spritz of cooking spray, and season the salmon on both sides. Place on the foil and give the top of the salmon a spritz of cooking spray.
  • Bake under the broiler- this should take about 6-8 minutes. When its done, remove from the oven and set it aside to rest.
  • When your water comes to a boil, salt it and add the pasta. You will add in the asparagus during the last minute of cooking.
  • To make the sauce, whisk together the first 9 ingredients of the sauce in a small saucepan and set over medium heat. Stir occasionally. When it has thickened and no longer has a starchy flavor, take off the heat.
  • When the pasta and asparagus is done cooking, drain and return to the pan you cooked it inches Dice the salmon into bite sized pieces and add to the pasta.
  • Just before adding the sauce to the pasta, stir in the lemon juice and light butter. Dump this into the pan with the pasta, asparagus and salmon, toss gently until the pasta is completely coated with sauce.
  • Serve!

VEGAN CREAMY LEMON ASPARAGUS PASTA RECIPE - (4.3/5)

Vegan Creamy Lemon Asparagus Pasta Recipe - (4.3/5) image

Provided by ruthg

Number Of Ingredients 9

1 bunch asparagus, trimmed and washed, about 12-ounces
sea salt and black pepper to taste
2 lemons, 1 lemon cut into slices, juice of half of 1 lemon, 1/2 of a lemon cut into wedges, divided
3 1/2 olive oil, divided, plus more to taste
3 to 4 large cloves garlic, minced, about 2 tablespoons
about 5 cups bow tie pasta, see notes if gluten-free
2 1/2 cups unsweetened plain almond milk
3 to 4 tablespoons all-purpose flour, substitute another thickener like cornstarch if gluten-free
1 to 2 tablespoons nutritional yeast, optional

Steps:

  • Preheat oven to 400°F. Add asparagus to a baking sheet and toss with 1/2 tablespoon olive oil and a pinch each salt and black pepper. Top with several thin slices of lemon and bake for 20 to 25 minutes. Once finished cooking, remove from oven and roughly chop into thirds. In the meantime, bring a pot of water to a boil and salt generously. While the water's heating, bring a large skillet to medium heat. Once hot, add 3 tablespoons olive oil and the garlic. Whisk and continue cooking for 1 to 2 minutes or until garlic is just starting to brown. Add 3 tablespoons flour and whisk. Cook for 30 seconds, then whisk in almond milk, a 1/2 cup at a time. Use a large flat spatula to smash down the bits of garlic and flour to properly incorporate. Add a healthy pinch salt and black pepper and whisk. Slightly lower heat and continue cooking to thicken, stirring occasionally. Add pasta to boiling water and cook according to package instructions. Then drain and set aside. For extra creamy sauce, add sauce to a blender or use an immersion blender to blend. Add nutritional yeast and another pinch of salt and black pepper. If it looks runny, add another tablespoon of flour or cornstarch. Blend until creamy and smooth, using the "puree" or "liquify" setting if possible. Taste and adjust seasonings as needed, then add back to pan and continue cooking over medium to medium-low heat to thicken. Once your sauce has reached the desired thickness, add the juice of half a lemon and stir. Add 3/4 of the chopped asparagus and the cooked pasta to the sauce and toss to coat. Divide between 2 to 3 serving plates and top with remaining asparagus. Serve with a lemon wedge and vegan parmesan cheese. Store leftovers in the refrigerator for up to 2 or 3 days. NOTES: To keep this recipe gluten-free, use gluten-free pasta and sub the flour with cornstarch or another thickener of choice. Add 1 to 2 tablespoons during the blending process to make sure it's completely blended. Then add back to the pan to thicken for 5 to 7 minutes. Alternatively, make a slurry with the cornstarch and a few tablespoons of the sauce in a small bowl and then whisk it directly into the pan during the simmering process. Repeat in 1/2 tablespoon amounts until desired consistency is reached.

Tips:

  • Choose the right asparagus: Look for asparagus spears that are firm, green, and have tight tips. Avoid spears that are wilted, yellowed, or have brown spots.
  • Prepare the asparagus properly: Wash the asparagus spears thoroughly and trim off the tough ends. If the spears are thick, you may need to peel them before cooking.
  • Don't overcook the asparagus: Asparagus is best when it is cooked until tender-crisp. Overcooked asparagus will be mushy and bland.
  • Use a flavorful cheese: The type of cheese you use will have a big impact on the flavor of the pasta. Use a cheese that is flavorful and melts well, such as Parmesan, cheddar, or Gruyère.
  • Add some herbs: Herbs can add a lot of flavor to the pasta. Some good options include parsley, basil, and thyme.

Conclusion:

Creamy asparagus pasta is a delicious and easy-to-make dish that is perfect for a quick weeknight meal. With just a few simple ingredients, you can create a flavorful pasta dish that the whole family will enjoy. So next time you're looking for a new pasta recipe, give creamy asparagus pasta a try.
