1 (9 ounce) package refrigerated cheese tortellini
¼ cup ranch dressing
1 tablespoon milk
8 ounces cubed, cooked chicken
2 ½ ounces fresh mozzarella, diced
⅓ cup chopped cooked bacon
2 tablespoons chopped green onions
1 tablespoon chopped fresh flat-leaf parsley
salt and freshly ground black pepper to taste (optional)

Steps:

  • Fill a large pot with lightly salted water and bring to a rolling boil. Stir in tortellini and return to a boil. Cook uncovered, stirring occasionally, until the tortellini float to the top and the filling is hot, about 3 minutes. Run tortellini under cold water and drain. Store in the refrigerator until chilled, at least 30 minutes.

1/4 cup chopped shallot
1/4 cup reduced-fat mayonnaise
2 tablespoons nonfat sour cream
2 tablespoons Dijon mustard
2 tablespoons lemon juice
1 tablespoon white wine vinegar
3/4 teaspoon black pepper
1/2 teaspoon kosher salt
8 ounces uncooked large elbow macaroni
2/3 cup fresh green peas
2/3 cup finely diced red bell pepper
2/3 cup finely diced red onion
1/2 cup thinly sliced green onion
1/4 cup chopped fresh flat-leaf parsley
1/2 teaspoon grated lemon rind
3 slices bacon, fat removed, cooked and crumbled

2 slices bacon, trimmed of fat and cut into thirds
1/2 cup good quality whole egg mayonnaise (like Thomay)
1 1/2 tablespoons water
2 eggs
50 g pine nuts
150 g baby spinach leaves, washed and dried

  • FOR THE DRESSING.
  • Cook the bacon in a non stick pan over a high heat for about 5 minutes or until crispy.
