4 teaspoons butter
2 lbs fish fillets (sole, haddock, cod, whiting, tilapia or flounder)
1 teaspoon salt
1/2 teaspoon Tabasco sauce
1 tablespoon paprika
1/4 cup parmesan cheese
1 cup sour cream
1/4 cup dry breadcrumbs

Steps:

  • Grease a casserole with 1 teaspoon butter and arrange the fish in the baking dish.
  • Blend the salt, hot sauce, paprika and Parmesan cheese with the sour cream and spread the cream over the fish.
  • Top with the breadcrumbs and dot with the remaining three teaspoons of butter.
  • Bake, uncovered, at 350°F for about 30 minutes, or until the fish flakes easily with a fork.

1 c sour cream
1/4 c fresh grated parmesan cheese
1 Tbsp lemon juice
1 hard-cooked egg, mashed
1/2 tsp salt
1/8 tsp balck pepper
1 medium tomato, chopped fine
1 small white onion, minced
2 lb fish fillets of your choice
paprika and old bay seasoning to sprinkle
2 dash(es) hot pepper sauce, optional

Steps:

  • 1. In a medium bowl combine sour cream, Parmesan cheese, lemon juice, mashed egg, salt and pepper, chopped tomato and onion. If using hot pepper sauce, add it now.
  • 2. Mix well with a whisk to blend flavors together. This can be made earlier and kept in refrigerator. I often do this.
  • 3. Grease a very large baking dish. Place fillets in a single layer.
  • 4. Spoon cream mixture over fillets. Sprinkle with paprika and Old Bay seasoning.
  • 5. Bake in a preheated 350 degree oven for 20 minutes or until fish easily flakes.
