BANANA AND CAROB ICE-CREAM

Banana and Carob Ice-Cream image

I got this recipe from "The Australian Women's Weekly 501 Low-Fat Recipes" book. This ice-cream is really great because not only does it have a great taste, but it is also low in fat. Carob is kind of an acquired taste, but those who do enjoy it, usually can't get enough. Carob is also used as an alternative to chocolate for diabetics. NOTE: For the cup of banana, use 3 medium sized overripe bananas. The prep time does not include freezing time.

MINTY CAROB SHAKE (RAW VEGAN)

Minty Carob Shake (Raw Vegan) image

(LFRV compliant!) Oh my!!! I have had this two days in a row and I don't think I see an end in sight - sooooo delicious!! This is so creamy, rich, and so much better than any mint chocolate ice cream I have had (mainly because I can have so much without feeling awful afterwards!!). I use lady finger bananas which are much smaller than normal bananas...I'm not exactly sure how many this would be equal to so I had to use cups...sorry if that causes any difficulties. You may add more mint or carob depending on your tastes - this was just enough to get the flavors for me without wasting. Also I put this down for 2 servings but I drink the whole thing and feel amazingly energized but I guess you could share if you like :)

Time 10m

Yield 5 cups, 2 serving(s)

Number Of Ingredients 5

4 dates, soaked
1 cup water
3 cups bananas (I use half or even all frozen for a frosty treat)
1/4 cup fresh mint leaves
1/4 cup raw carob powder

Steps:

  • First blend the dates and water (once you put frozen bananas in those dates get really cold & hard to blend so work them out first).
  • Add the rest of the ingredients and blend up. You may need to add more water to get things moving, thats fine it won't take away any flavor. Garnish with a mint leaf if you like but mine is usually gone before I would even have time for this. Enjoy!

Tips:

  • Opt for ripe bananas: Overripe bananas contribute a naturally sweet flavor, reducing the need for additional sweeteners.
  • Choose unsweetened carob powder: Sweetened carob powder may result in an overly sweet drink. Moreover, unsweetened carob powder allows for better control over the drink's sweetness level.
  • Adjust liquid consistency: Achieve desired consistency by adjusting the amount of liquid used. For a thinner consistency, add more almond milk or water. For a thicker consistency, use less liquid.
  • Use high-quality vanilla extract: Opt for pure vanilla extract to enhance the drink's flavor.
  • Don't skip the optional ingredients: Cinnamon and nutmeg add subtle warmth and depth to the drink's flavor profile.

Conclusion:

This creamy banana carob drink is a delectable treat that strikes a perfect balance between sweet and earthy flavors. Its smooth and creamy texture makes it an ideal choice for a refreshing and nutritious snack or dessert. With its simple preparation and minimal ingredients, this drink is sure to become a favorite among health-conscious individuals and those seeking a delightful non-caffeinated beverage. Feel free to experiment with different flavor combinations by adding your favorite spices or extracts to create a drink that suits your unique taste preferences.
