Steps:

  • Brown sausage in a medium-sized skillet over medium-high heat, about 2-3 minutes or until the sausage is browned on the outside.
  • Add cabbage and stir until the cabbage has softened a little, about 5 minutes.

1 pound smoked sausage (sliced)
2 tablespoons butter
⅔ cup onion (chopped)
4 cups low sodium chicken broth
¾ pound potatoes (diced (about 2-3 medium))
2 carrots (sliced)
3-4 cups cabbage (chopped)
1 rib celery (sliced)
salt & pepper to taste
⅓ cup butter
⅓ cup all-purpose flour
1 cup milk
1 cup heavy cream
3 tablespoons fresh parsley
1 tablespoon fresh dill

Steps:

  • Cook sausage, onion and butter until onion is tender. Add celery, carrot, potato, cabbage, broth and salt & pepper to taste.
  • Bring to a boil. Reduce heat, cover and simmer 10-15 minutes or until potatoes are tender.
  • Meanwhile, melt butter in a small saucepan. Stir in flour and cook over medium heat about 2 min. Add milk and cream and stir until smooth. Continue whisking until thick and bubbly.
  • Once vegetables are tender, add cream mixture into the soup. Allow to simmer 5 minutes.
  • Remove from heat and stir in dill and parsley.

1 lb. smoked sausage, such as kielbasa, sliced into coins, 1/2" thick
1/2 yellow onion, sliced
8 c. chopped green cabbage (about half of 1 medium cabbage)
3 cloves garlic, chopped
1 tsp. salt, plus more to taste
1/2 tsp. ground black pepper, plus more to taste
1/2 c. chicken stock
2 tbsp. chopped fresh parsley, optional
Grainy mustard and/or sour cream, for serving (optional)

Steps:

  • Heat a large skillet (with a tight fitting lid) over medium-high heat. Heat the olive oil and butter until melted. Add the sausage and cook, stirring occasionally, until golden brown on both sides, about 5 minutes. Remove the sausage with a slotted spoon, leaving the oil in the pan and set aside on a plate.
