CREAM CHEESE CHICKEN VERMICELLI

Cream Cheese Chicken Vermicelli image

Time to indulge a little. Pasta with a creamy, cheesy, lush sauce warms up a cold winter evening. Add tender chicken breast for a completely satisfying-and very inviting-casual dinner for four. Note: The sauce may seem "soupy" at first, but it will thicken quickly as the cream cheese melts and the pasta is added to it.

Yield 4 serving(s)

Number Of Ingredients 13

6 ounces vermicelli or 6 ounces angel hair pasta
4 (4 ounce) boneless skinless chicken breast halves
2 tablespoons olive oil
1/2 cup flour, for dredging (about 1/2 cup)
1/2 teaspoon sea salt
1/2 teaspoon fresh ground black pepper
1 medium shallot, finely chopped
1/2 cup dry white wine
3/4 cup chicken broth
3/4 cup skim milk
1/3 cup finely grated parmesan cheese

VERMICELLI WITH LEMON CREAM SAUCE

Vermicelli with Lemon Cream Sauce image

My daughter likes tart and lemony things so I created this lemon cream sauce for pasta which is ready in mere minutes if you're using vermicelli. Adjust lemon juice and zest quantities to your liking.

Provided by barbara

Time 15m

Yield 2

Number Of Ingredients 7

½ (8 ounce) package vermicelli pasta
1 large organic lemon
¾ cup heavy cream
1 teaspoon instant vegetable bouillon granules
salt and freshly ground black pepper to taste
2 large egg yolks
1 tablespoon fresh basil, chopped, or more to taste

Steps:

  • Fill a large pot with lightly salted water and bring to a rolling boil. Stir in vermicelli pasta and return to a boil. Cook pasta uncovered, stirring occasionally, until the pasta is tender yet firm to the bite, 3 to 4 minutes.
  • Meanwhile, wash lemon under hot water and dry. Use a microplane to grate off the zest of half the lemon. Juice the entire lemon.
  • Heat cream over low heat in a pot until hot, about 3 minutes. Stir in lemon zest. Add lemon juice, a little at a time, while stirring constantly. Season with vegetable bouillon granules, salt, and pepper and remove from heat. Allow to cool slightly.
  • Mix egg yolks with 2 tablespoons hot lemon cream and stir until well combined. Return sauce to the stove and stir in egg yolk mixture. Heat but do not allow to boil otherwise the egg will set. Mix in basil.
  • Drain verimicelli and add to sauce. Mix, and serve.

Tips:

  • Choose the right pasta: Vermicelli is a thin, long pasta that cooks quickly and pairs well with creamy sauces. If you don't have vermicelli, you can use angel hair pasta or spaghetti.

  • Cook the pasta al dente: This means cooking the pasta until it is tender but still has a slight bite to it. Overcooked pasta will be mushy and won't hold the sauce well.

  • Don't overcrowd the pan: When cooking the bacon, don't overcrowd the pan or the bacon will steam instead of crisp up. Cook the bacon in batches if necessary.

  • Use a good quality cheese: The cheese is one of the main ingredients in this dish, so it's important to use a good quality cheese that melts well. Cheddar, Parmesan, and Gruyère are all good choices.

  • Season the sauce to taste: The sauce should be seasoned to taste with salt, pepper, and garlic powder. You can also add other spices, such as smoked paprika or chili powder, to taste.

  • Serve immediately: This dish is best served immediately, while the pasta is still hot and the sauce is creamy. You can garnish the dish with chopped parsley or chives.

Conclusion:

Creamy cheese bacon vermicelli is a quick and easy pasta dish that is perfect for a weeknight meal. It's made with just a few simple ingredients, and it's sure to please everyone at the table. So next time you're looking for a delicious and easy pasta dish, give this recipe a try!
