CREAMY CHICKEN AND WILD RICE SOUP

A supremely filling, hearty soup. I serve this on cold rainy days with a loaf of homemade bread. Hint: this is perfect for leftover rotisserie chicken or chicken you've pulled from the bone after making homemade chicken stock! This soup makes great leftovers, but you might want to thin it slightly with skim milk or water when reheating.

Tips:

  • To achieve a creamy texture, use a high-quality heavy cream. If you don't have heavy cream, you can substitute it with milk or half-and-half, but the soup will be thinner.
  • Fresh mushrooms add a delicious earthy flavor to the soup. If you don't have fresh mushrooms, you can use dried mushrooms, but be sure to rehydrate them before adding them to the soup.
  • Wild rice is a hearty and nutritious grain that adds a nice texture to the soup. If you don't have wild rice, you can use brown rice or white rice.
  • Fresh herbs, such as thyme, rosemary, and parsley, add a bright and flavorful touch to the soup. If you don't have fresh herbs, you can use dried herbs, but be sure to add them sparingly.
  • For a richer flavor, use chicken broth instead of water. You can also add a bay leaf or two to the soup for extra flavor.
  • Don't overcook the soup. The chicken should be cooked through, but it should not be tough. The soup should also be heated through, but it should not be boiling.

Conclusion:

This creamy chicken and wild rice soup is a delicious and comforting meal that is perfect for a cold winter day. It is easy to make and can be tailored to your own taste preferences. With its creamy texture, hearty ingredients, and flavorful broth, this soup is sure to be a hit with your family and friends.
