Steps:

  • Heat a large pan over high heat.
  • Drizzle a few teaspoons of olive oil over the chicken then season with salt and pepper.

1 lb chicken thigh filets (cut in bite-size pieces)
1 tsp paprika powder
1 tsp onion powder
1 tsp ground black pepper
1 tsp salt
½ lb dry penne pasta (uncooked)
½ lb broccoli (cut in bite-sized pieces, stem peeled and chopped)
2 garlic cloves (peeled and crushed, but in one piece)
2 Tbsp chopped parsley (fresh or frozen)
1 cup shredded cheese (divided)
1 cup shredded Parmesan cheese (divided)
2 cups heavy cream
2 cups milk

Steps:

  • Preheat the oven to 390°F (200°C)
  • Melt 1 tablespoon of butter in a pan over medium-high heat. When the butter is melted, add in the chicken pieces. Season with paprika powder, onion powder, salt and pepper and mix well to spread out the seasonings. Cook for about 2 minutes per side, until the chicken has nice color. It does not have to be cooked all the way through at this stage as it will finish cooking in the oven.
  • Bring out a casserole dish that measures about 8x10 inches (20x25 cm). Grease with 1 tablespoon of butter.
  • Place the uncooked pasta in the greased casserole dish. Follow with the cooked chicken, including any leftover fat from frying. Then add chopped broccoli, garlic cloves, parsley and half of both the shredded neutral cheese and the shredded parmesan. Mix as well as possible.

1 (16 ounce) package rotini pasta, uncooked
2 tablespoons butter
3 tablespoons extra-virgin olive oil
2 cups broccoli florets, finely chopped
2 tablespoons all-purpose flour
1 cup chicken broth
1 cup milk
salt and pepper to taste
⅛ teaspoon chipotle chile powder
2 cups Cheddar cheese, shredded
¼ cup onion, finely diced

200g cooked chicken, torn into pieces
2 garlic cloves, thinly sliced
1 chicken stock cube
160g dried short pasta
100g frozen peas
200g long-stem broccoli, cut into 3-4 pieces
150g crème fraîche
1 lemon, juiced
30g parmesan, grated, plus extra to serve
small bunch fresh mint, leaves picked

  • Drizzle a little oil into a large, high-sided frying pan set over a medium heat. When the pan is hot, add the chicken and garlic, and fry for 5 mins, stirring often so it doesn't burn. 200g broccoli, cut into very small florets and the stems thinly sliced
2 tbsp olive oil
350g boneless, skinless chicken breasts, thinly sliced
175g chestnut mushrooms, quartered
4 tbsp sundried tomato paste
80g soft cheese with garlic and herbs (such as Boursin)
284ml carton single cream
bunch of spring onions, finely sliced
85g mature cheddar, grated
1 garlic clove, finely chopped
50g flaked almonds

Steps:

  • Heat the oven to 190C/ fan170C/ gas 5. Bring a large pan of salted water to the boil. Throw in 350g pasta shells or quills, stir well and return to the boil.
  • Cook for 6 minutes, then add 200g broccoli, cut into very small florets and stems thinly sliced, and cook for 5-6 minutes more until the pasta is just cooked. Drain well, then return to the pan.
