2 tablespoons diced roasted red bell pepper

A recipe from my old English teacher who makes this every Christmas Eve for her family. My family joined theirs one Christmas Eve and fell in love with this entree! I couldn't find white Worcestershire sauce, so I just used the regular. Also, if you're on a budget, crab can be expensive at times, so I've done half crab/half shrimp in this recipe and it's just as great.

1 lb special lump crabmeat
8 ounces softened cream cheese
1 teaspoon dry mustard
3/4 teaspoon white Worcestershire sauce
1/3 cup mayonnaise (I use sour cream)
1/2 cup sauteed celery
1/2 cup sauteed onion

Steps:

  • Blend cheese, mustard, worcheshire sauce and sour cream till smooth.
  • Stir in celery and onion.
  • Fold in crab meat.
  • Put into quiche dish that has been sprayed with Pam.
  • Sprinkle with Old Bay or paprika.
  • Bake at 350 degress for 35-40 minutes.
  • I always double, and sometime even triple, this recipe.

10 asparagus spears , each trimmed and cut into 3 pieces on the diagonal
100g broad beans , podded
handful watercress
100g crabmeat (I used a mixture of white and brown)
1 large egg
2 tsp Dijon mustard
1½ tsp golden caster sugar
1 tbsp lemon juice
1 tbsp extra-virgin olive oil
3 tbsp double cream

Steps:

  • Boil the asparagus and beans in salted water for 2 mins, drain well, then cool quickly under cold running water. Slip the outer skins from the beans.
  • For the salad cream, put the egg into a pan of boiling water, then boil for 5 mins. Cool quickly under running water, then peel. Cut the egg carefully in half, then scoop the yolk into a bowl. Whisk in the mustard, sugar, lemon juice and seasoning. Whisk in the oil and cream.
  • Arrange the watercress, asparagus and beans over two plates. Pile the crab in the centre, then drizzle with the dressing.

1 cup milk

Steps:

  • Place asparagus in a greased 1-qt. baking dish. Top with crab and sprinkle with cheese; set aside. In a saucepan, melt 2 tablespoons butter. Stir in flour until smooth. Whisk in milk, mustard, salt and pepper. Bring to a boil over medium heat; cook and stir for 2 minutes or until thickened. , Remove from the heat; stir in lemon juice. Pour over asparagus. Melt remaining butter; toss with bread crumbs. Sprinkle over top. Bake, uncovered, at 350° for 30 minutes or until heated through.

I created this for the Ready Set Cook contest in 2003. Morsels of mock crab in a spicy creamy asparagus soup. Microwaving the vegetables is a time and nutrient saver, but you could also boil or steam them.

1 lb asparagus, ends trimmed, coarsely chopped
1 small onion, coarsely chopped
1 potato, diced
8 ounces surimi or 8 ounces imitation crabmeat, broken into small pieces
1 cup chicken broth
1 cup milk
1 tablespoon flour
3 tablespoons butter (or Smart Balance)
1 tablespoon garlic powder
1 tablespoon yellow curry powder
1/4 teaspoon ground cayenne pepper
1/2 teaspoon ground black pepper
1 teaspoon salt
1 dash Worcestershire sauce

Steps:

  • Cook asparagus, onion, and potato (layered in that order) in a round covered casserole dish, with the chicken broth, in the microwave on high for 10 minutes (stirring 2-3 times).
  • When vegetables are tender, remove half of the potatoes and set them aside (you can also set aside the asparagus tips if you like).
  • Put the vegetables in a blender and puree until smooth (you may have to do it in two batches, depending on the size of your blender). Alternately, put them in a pot and use a hand blender.
  • Put the puree in a pot on medium heat and whisk in 1 T flour. Stir until smooth and soup begins to boil.
  • Reduce heat to medium-low (simmering) and add the remaining potatoes to the pot.
  • Stir in the butter, milk, garlic, curry, cayenne, black pepper, salt and Worcestershire, and simmer for 10 minutes.
  • Add the crab (and asparagus tips if you saved them) and simmer for 5 minutes.

300g ready-made shortcrust pastry
25g butter
25g plain flour
300ml milk
freshly grated nutmeg
2 good pinches chilli powder
200g white crabmeat , fresh or frozen and defrosted
140g asparagus tips
3 eggs , separated
3 tbsp finely grated parmesan

Steps:

  • Heat oven to 200C/180C fan/gas 6. Roll out pastry and line a 25cm tart tin. Line the case with greaseproof paper and fill with baking beans. Bake for 15 mins, then remove paper and beans and cook for 5 mins more. Trim off excess pastry. Reduce oven to 190C/170C fan/gas 5.
  • Melt the butter in a non-stick pan, stir in the flour and cook for 1 min. Gradually add the milk, stirring all the time until the sauce is smooth and glossy. Add nutmeg, chilli and salt and leave to cool slightly.
  • Flake up the crabmeat and add to the sauce. Blanch the asparagus for 3 mins, drain well and cool under cold running water. Pat dry with kitchen paper and scatter over the pastry case.
  • Stir the egg yolks into the sauce. Whisk the whites until stiff, then fold into the sauce in 3 batches. Spoon into the tart case and sprinkle with Parmesan. Bake for 30-35 mins until puffed and golden.
