From Betty Crocker -- Slow Cooker recipes. NOTE: Posted as written, however, I cook the rice separately usually the night before if it is a work day, refrigerate the rice and then add it during the last 15-20 minutes to avoid mushy rice!

Steps:
- 1. Sprinkle clean chicken breast with ranch dry mix salad dressing and place in crock pot. Cover and cook on low for 4-6 hours.
- 2. In a saucepan combine 1 can cream of chicken soup, butter, and cream cheese. Add a dash of salt & pepper and stir continuously while combining ingredients. This should become very creamy & easy to pour.
- 3. Drain any juices from the cooked chicken and pour creamy mixture over chicken. (I like to cut my chicken into bite sized pieces, but you can serve them whole.) Cover with lid and let cook on low for at least 30 minutes. (I prefer 45 mins.)
- 4. Serve creamy chicken over rice, noodles or mashed potatoes. It is a rich creamy dish that is easy to impress!! Just add a fresh salad or favorite veggie, roll and you are set!
Tips:
- Use boneless, skinless chicken breasts or thighs. This will make the chicken easier to shred and will help to reduce the amount of fat in the dish.
- Season the chicken generously with salt and pepper. This will help to enhance the flavor of the chicken.
- Use a variety of vegetables. This will add color, flavor, and nutrients to the dish. Some good options include carrots, celery, onions, potatoes, and corn.
- Use a creamy soup or sauce. This will help to create a rich and flavorful sauce for the chicken and rice.
- Cook the chicken and rice on low for 6-8 hours. This will allow the chicken to cook through and the rice to become tender.
- Serve the chicken and rice with your favorite toppings. Some good options include shredded cheese, salsa, guacamole, and sour cream.
Conclusion:
Creamy crock pot chicken and rice is a delicious and easy-to-make dish that is perfect for a busy weeknight meal. It is also a great way to use up leftover chicken. With a few simple ingredients and a slow cooker, you can have a tasty and satisfying meal that the whole family will enjoy.
