Tips:

  • To ensure the fudge sets properly, use a heavy saucepan and a candy thermometer. The fudge should reach 234°F (112°C) before removing it from the heat.
  • If you don't have a candy thermometer, you can test the fudge by dropping a small amount into a glass of cold water. If the fudge forms a soft ball, it is ready. If it dissolves, it needs to be cooked longer.
  • To make the fudge extra creamy, use a combination of milk and cream. You can also add a small amount of butter or corn syrup for a richer flavor.
  • For a chocolate fudge, add 1/2 cup of cocoa powder to the melted butter mixture. For a peanut butter fudge, add 1/2 cup of peanut butter to the melted butter mixture.
  • Once the fudge has set, cut it into small pieces and store it in an airtight container at room temperature. Fudge can be stored for up to 2 weeks.
