CREAMY MUSHROOM SOUP WITH LITTLE WHITE BEANS
This is a great healthy soup recipe that can easily be vegan - just use veggie broth and skip the dairy! You can use plain old button mushrooms but I really enjoyed this with oyster and baby portobello mushrooms. I also chose sherry and evaporated milk and it turned out great. This is a modified version of a recipe that I got from our health region's magazine. Enjoy!

Tips:
- Use good quality mushrooms. Fresh, flavorful mushrooms will make all the difference in your soup. Look for mushrooms that are firm and dry, with no signs of bruising or discoloration.
- Sauté the mushrooms before adding them to the soup. This will help to develop their flavor and give the soup a richer taste.
- Use a variety of mushrooms. Different types of mushrooms will give your soup different flavors and textures. Try using a mix of cremini, shiitake, and oyster mushrooms.
- Don't overcrowd the pan when sautéing the mushrooms. If you overcrowd the pan, the mushrooms will steam instead of brown.
- Use vegetable broth instead of water. Vegetable broth will add more flavor to your soup.
- Season the soup to taste. Add salt, pepper, and other seasonings to taste. You may also want to add a splash of lemon juice or white wine.
- Serve the soup with a dollop of sour cream or yogurt. This will add a creamy richness to the soup.
Conclusion:
Creamy mushroom soup with little white beans is a delicious, hearty, and satisfying soup that is perfect for a cold winter day. It is also a very versatile soup that can be easily customized to your own taste. So next time you are looking for a quick and easy weeknight meal, give this creamy mushroom soup a try.
