PAN FRIED CHICKEN MEDALLIONS IN CREAMY BASIL PARMESAN SAUCE
This is a very rich dish. I made it the other night for the family and we loved it. It is a little like alfredo sauce over fried chicken. That's the best description I can give you. Don't eat this if you don't/can't eat lots of fat. It is completely out of this world though. I hope those of you brave enough to try it enjoy it as much as I do.

CHICKEN PARMESAN & CREAMY TOMATO & BASIL SPAGHETTI
This recipe was really good and so easy! You'll impress all your guests if you serve this one. I could not locate the Philly Cream Josee calls for in my grocery store, so I substituted with a sundried tomato & basil spreadable cheese.

Tips:
- Mise en place: Before you start cooking, make sure you have all the ingredients and equipment you need. This will help you stay organized and avoid any scrambling.
- Use fresh ingredients: Fresh ingredients will give your dish the best flavor. If possible, try to use organic or locally-sourced ingredients.
- Don't overcrowd the pan: When searing the chicken, don't overcrowd the pan. This will prevent the chicken from cooking evenly and will result in steamed chicken instead of seared chicken.
- Use a good quality Parmesan cheese: The Parmesan cheese is one of the key ingredients in this dish, so it's important to use a good quality cheese. Look for a Parmesan cheese that is aged for at least 12 months.
- Don't overcook the chicken: Chicken is a delicate meat, so it's important to not overcook it. Cook the chicken until it is just cooked through, or until it reaches an internal temperature of 165 degrees Fahrenheit.
Conclusion:
This creamy Parmesan basil chicken is a delicious and easy-to-make dish that is perfect for a weeknight meal. The chicken is seared until golden brown and then simmered in a creamy Parmesan basil sauce. The dish is served over pasta or rice. Here are some additional tips for making this dish:- If you don't have any basil on hand, you can substitute another herb, such as oregano or thyme.
- You can also add other vegetables to this dish, such as mushrooms, zucchini, or bell peppers.
- If you want a thicker sauce, you can add a cornstarch slurry to the sauce. To make a cornstarch slurry, mix equal parts cornstarch and water until smooth. Then, stir the slurry into the sauce and cook until thickened
