This is a recipe I use during hunting season. We are all hunters and the opening day of pheasant season in South Dakota is like a national holiday around here!

2 pheasants
1/2 cup butter
2 (10 ounce) cans cream of mushroom soup
1 (13 ounce) can sliced mushrooms, drained
1/2 cup Worcestershire sauce
3/4 cup milk

Steps:

  • Bone pheasant and dice into bite-sized chunks.
  • Melt butter in frying pan; add pheasant chunks and saute for 15-20 minutes. Added drained mushrooms.
  • Mix together mushroom soup, worcestershire sauce and milk until smooth.
  • Pour over pheasant and mushrooms in pan and simmer 30-45 minutes.
  • While pheasant is cooking boil noodles til done, drain and keep warm.
  • Serve pheasant over hot noodles.

4 boneless, skinless pheasant breasts, about 1/3 pound each
Salt and freshly ground pepper to taste
2 teaspoons paprika
2 teaspoons butter
1/2 cup finely chopped onions
2 sprigs fresh thyme or 1/2 teaspoon dried
1/4 cup dry white wine
1/3 cup heavy cream
1/3 cup sour cream

Steps:

  • Sprinkle the breasts with salt, pepper and paprika.
  • Melt the butter in a heavy nonstick skillet large enough to hold the pheasant breasts in one layer. Add the breasts and cook over medium-high heat for 3 minutes or until they are lightly browned. Turn the breasts and cook for 3 minutes more. Add the onions and thyme. Stir and cook until the onions are wilted. Add the wine to dissolve the brown particles that cling to the bottom of the pan. Continute cooking until most of the wine evaporates.
  • Add the heavy cream and cook until the liquid is reduced by half. Add the sour cream, blend well and bring to a boil, stirring until smooth. Taste and adjust the seasonings and serve very hot.

2 tablespoons chopped fresh parsley
1 bay leaf
2 pounds cubed pheasant meat
2 (10.75 ounce) cans reduced fat reduced sodium condensed cream of mushroom soup
½ cup water
1 teaspoon dried thyme leaves, crushed
¼ teaspoon ground black pepper
1 cup frozen peas
salt and pepper to taste
paprika to taste
1 (10 ounce) package dried egg noodles

Steps:

2 pheasants (2 1/2 to 3 pounds each), thawed if frozen
1/2 cup all-purpose flour
1/2 teaspoon seasoned salt
1/4 teaspoon pepper
2 tablespoons vegetable oil
1 package (8 ounces) whole mushrooms
2 cups baby-cut carrots
1 tablespoon butter or margarine
1 cup half-and-half
1/2 cup chicken broth
2 tablespoons dry sherry or chicken broth
1 tablespoon chopped fresh or 1/2 teaspoon dried oregano leaves

Steps:

  • Heat oven to 350°. Cut each pheasant in half along backbone and breastbone from tail to neck with kitchen scissors. Mix flour, seasoned salt and pepper in shallow bowl. Coat pheasant generously with flour mixture. Reserve remaining flour mixture.
  • Heat oil in 12-inch skillet over medium-high heat. Cook pheasants in oil 3 to 4 minutes on each side or until well browned. Place in ungreased rectangular pan, 13x 9 x 2 inches, or in shallow roasting pan. Top and surround pheasants with mushrooms and carrots.
