A great wintery soup full of creamy goodness :)

Steps:

  • Heat oil in soup pan. Add leeks, potato and onion. Fry for 3/4 minutes until slightly softened.
  • Add vegetable stock and bring to the boil. When vegetables are tender add salt and pepper to taste.
  • Remove soup from the hob and, using a liquidiser or blender, liquidise the soup until it is smooth.
  • Return the pan to the heat. Stir in the cream and heat through.
  • Serve piping hot with bread and butter.

Tips:

  • Use high-quality ingredients: Fresh, flavorful ingredients will make your soup taste its best. Look for leeks that are firm and green, and potatoes that are smooth and blemish-free.
  • Don't overcrowd the pot: When you're cooking the leeks and potatoes, make sure there's enough room in the pot for them to cook evenly. If the pot is too crowded, the vegetables will steam instead of sautéing, and they won't develop as much flavor.
  • Cook the leeks and potatoes until they're soft: This will help to develop their flavor and make them easier to blend. You should be able to easily pierce the vegetables with a fork when they're done.
  • Use a good quality vegetable broth: The broth is an important part of the soup, so it's important to use a good quality one. Look for a broth that's low in sodium and has a rich, flavorful taste.
  • Blend the soup until it's smooth: Use an immersion blender or a regular blender to blend the soup until it's smooth and creamy. If you're using a regular blender, be sure to work in batches and blend on low speed to avoid splattering.
  • Season the soup to taste: Once the soup is blended, taste it and adjust the seasonings as needed. You may want to add more salt, pepper, or herbs.
  • Serve the soup with your favorite toppings: Some popular toppings for creamy potato leek soup include croutons, bacon, shredded cheese, and chopped chives.

Conclusion:

Creamy potato leek soup is a delicious and comforting soup that's perfect for a cold winter day. It's also relatively easy to make, and it can be tailored to your own taste preferences. So next time you're looking for a hearty and satisfying soup, give this recipe a try.
