6 strips (uncooked) bacon (cut into small pieces)
3 Tablespoons butter (unsalted or salted will work)
1 medium yellow onion (chopped (about 1.5 cup/200g))
3 large garlic cloves (minced)
⅓ cup all-purpose flour ((42g))
2 ½ lbs gold potatoes (peeled and diced into pieces no larger than 1" (this was about 6 Large potatoes for me/1.15kg))
4 cups chicken broth ((945ml))
2 cups milk ((475ml))
⅔ cup heavy cream ((155ml))
1 ½ teaspoon* salt
1 teaspoon ground pepper
¼ - ½ teaspoon ancho chili powder**
⅔ cup sour cream ((160g))
Shredded cheddar cheese, chives, and additional sour cream and bacon for topping (optional)

Steps:

  • Place bacon pieces in a large Dutch Oven or soup pot over medium heat and cook until bacon is crisp and browned.
  • Remove bacon pieces and set aside, leaving the fat in the pot.
  • Add butter and chopped onion and cook over medium heat until onions are tender (3-5 minutes).
  • Add garlic and cook until fragrant (about 30 seconds).
  • Sprinkle the flour over the ingredients in the pot and stir until smooth (use whisk if needed).
  • Add diced potatoes to the pot along with chicken broth, milk, heavy cream, salt, pepper, and ancho chili powder. Stir well.
  • Bring to a boil and cook until potatoes are tender when pierced with a fork (about 10 minutes).
  • Reduce heat to simmer and remove approximately half*** of the soup to a blender (be careful, it will be hot!) and puree until smooth (half is about 5 cups of soup, but just eyeballing the amount will be fine. Alternatively you can use an immersion blender.).
  • Return the pureed soup to the pot and add sour cream and reserved bacon pieces, stir well.
  • Allow soup to simmer for 15 minutes before serving.
  • Top with additional sour cream, bacon, cheddar cheese, or chives. Enjoy!

1 onion, chopped
¼ cup margarine
5 baking potatoes, peeled and chopped
8 cups chicken broth
1 teaspoon salt
½ teaspoon ground white pepper
2 carrots, cut into 1 inch pieces
4 stalks celery tops
1 (12 fluid ounce) can evaporated milk

Steps:

  • In a stock pot, saute onion in butter until yellow and soft. Add chicken stock, carrots, celery tops and potatoes. Stir in salt and white pepper. Bring to a boil and then reduce heat and cook until vegetables are tender enough to easily pierce with a fork.
  • Remove carrots and celery tops and discard. Add evaporated milk and heat through.
  • Using a food processor or blender, puree soup in small batches. Return to stock pot and keep over low heat until ready to serve, making sure soup does not scorch if not serving immediately. Garnish with chives and serve.

4 slices bacon
3 potatoes, peeled and chopped
1 onion, chopped
1 carrot, chopped
1 cup chopped celery
water to cover
4 cups milk
2 teaspoons salt

Steps:

  • In a large saucepan cook bacon until crisp. Set bacon aside, along with 3 tablespoons of bacon drippings.

2 tablespoons unsalted butter
1 medium yellow onion, diced
1 ½ pounds russet potatoes, peeled and diced
6 cups water, divided
1 ½ tablespoons Diamond Crystal® Kosher Salt
2 bay leaves
2 large sprigs fresh thyme
8 slices bacon, diced
1 bunch kale, large stems discarded, leaves thinly sliced
¼ teaspoon Diamond Crystal® Kosher Salt
½ teaspoon coarsely ground pepper, divided
1 cup whipping cream
1 red apple (Braeburn, Gala, Fuji), cored, diced, for garnish

Steps:

  • Melt butter over medium heat in Dutch oven. Add onion; cook and stir 3 to 4 minutes or until onion is translucent. Add potatoes, 5 1/2 cups water, 1 1/2 tablespoons Diamond Crystal® Kosher Salt, bay leaves and thyme. Bring to a boil; reduce heat and simmer 5 to 10 minutes or until potatoes are very tender.
  • Cook bacon in large skillet over medium heat until browned and crisp. Remove bacon from skillet with slotted spoon; drain on paper towels. Pour off bacon drippings, reserving 2 tablespoons for kale.
  • Heat reserved 2 tablespoons bacon drippings over medium heat. Add kale; cook and stir for 1 minute. Slowly add 1/2 cup water; cook and stir until liquid evaporates. Stir in 1/4 teaspoon Diamond Crystal® Kosher Salt and 1/4 teaspoon pepper. Remove from heat.

I will write it as I learned it but I do sub lots of light things and it is still wonderful. NOTE: THE KEY TO THE DIFFERENT TASTE IS THE GARLIC POWDER,CREAM CHEESE, VELVEETA AND THE BLEND OF VEGGIES. 5 lbs potatoes
2 cups baby carrots
3 -5 celery ribs
2 cups milk
3/4 cup half-and-half
6 ounces cream cheese
2 tablespoons butter
1 teaspoon garlic powder
salt
pepper
1 lb fried cooked bacon (crisp and broken in bite size peaces)
4 -5 green onions with tops, topping (chopped)
1 (8 ounce) package Velveeta cheese, shreads topping

Steps:

  • Peel and cut up the potatoes.
  • Cut the half carrots in half.
  • Cut up the celery into bit size pieces.
  • Let boil until all are tender.
  • Drain and put all the cooked veggies back into the pot.
  • Now add the butter, 1/2 the milk, half and half and cream cheese into the veggies.
  • Use a mixer to make the veggies like mashed potatoes.
  • Add rest of the milk and cream until you get the desired consistency you want the soup -- I like it a bit thick, not really thin soup.
  • When you get it to the way your family likes it, then add salt, pepper, and garlic powder.
  • Taste and adjust accordingly.
  • Let simmer for 15 minutes.
  • Now you are ready to top it with what you like.

3 potatoes, cut into 1/4-inch slices

1 pinch ground allspice
¾ teaspoon celery seed

Steps:

5 -6 large potatoes, peeled and cut into bite size pieces
1/2-1 lb bacon
1/4-1/2 cup flour
3 cups chicken broth
2 cups heavy cream
3/4 cup frozen corn kernels or 3/4 cup whole kernel corn, drained
1 medium onion, diced
6 garlic cloves, minced
1/4 cup butter (optional)
salt and pepper, to taste

Steps:

  • Fry bacon until crisp (see recipe #242966 for homemade bacon bit tips). Remove to paper towels to drain. Reserve bacon grease.
  • Meanwhile, boil potatoes in a large dutch oven in water; do not add salt! Drain.
  • Pour reserved bacon grease into empty dutch oven; saute onion and garlic in reserved bacon grease until onion is lightly browned.
  • Add flour to the sauted onion mixture, stirring to evenly brown; add cream and stir constantly until mixture thickens; add chicken broth and stir until bubbly.
  • Stir potatoes, corn and crumbled bacon into the soup; add butter, salt and pepper to taste. (you may not need salt. Bacon is very salty) Simmer until butter is melted and stirred into soup.
  • Add milk at little at a time if soup is too thick for your tastes.

1/2 cup margarine or 1/2 cup butter
1/3 cup all-purpose flour
3 cups milk
1 (10 1/2 ounce) can cream of celery soup
1 (12 ounce) can chicken broth
1/2 onion
1 teaspoon pepper
1 chicken bouillon cube
bacon
1 cup sharp cheddar cheese
sour cream

Steps:

  • Peel and cut up potatoes into bit size cubes. Boil approximately 45 minutes or until potatoes are soft.
  • While potatoes are cooking, make roux by combining margarine and flour over medium high heat until margarine is melted.
  • Slowly add milk and allow to thicken, continuosly stir making sure roux does not stick to the bottom of the pan.
  • Stir in chopped onion and bouillon, simmer for 5 minutes, continuously stirring roux.
