2 tablespoons butter
2 cans (14-1/2 ounces each) chicken broth
2 cups sliced peeled potatoes
1 can (15 ounces) solid-pack pumpkin
2 to 2-1/2 cups milk

1/4 teaspoon pepper
1 cup sour cream

4 cups chicken stock or 4 cups vegetable broth
1 red pepper
2 carrots
1 large red onion
1 red chile, deseeded (if you want some kick) (optional)
2 garlic cloves, chopped or 2 teaspoons minced garlic
1 cup heavy cream
1 tablespoon butter
2 ounces creamed coconut
salt
pepper

Steps:

  • Set broth boiling, chop skinned pumpkin into pieces, toss into broth.
  • Skin carrots, chop, toss inches.
  • Follow with red pepper, onion, and chili.
  • Boil until very soft (usually about half an hour).
  • If veg is still floating, drain off some broth (you can't drain too much as you can always add back, but can't take more out if it's not thick enough :).

1/2 large onion, peeled and sliced
1/4 c butter
4 1/2 c low sodium chicken broth
1 lb asparagus chopped

  • 1. Modern Method: In a large Dutch Oven (the type for stovetops) melt your butter and onion and gently cook until onion is translucent. Stirring frequently don't burn.
  • 2. Add the broth, pumpkin, asparagus, and season with salt and pepper. Increse the heat to bring to a boil. Once boiling reduce heat to simmer and simmer for 30 minutes or until the asparagus is nice and tender. You can sprinkle some toasted croutons on top of each bowl. Yummy.
  • 3. Note: My hubby added 1 cayanne pepper, chopped and sprinkled that on top too. It added a little heat but not much and was very yummy.
  • 4. Hearth Method: Follow modern method but use a round bottom kettle with legs, hanging from a crane in a fireplace or fire irons over a fire pit and cook over a moderate fire.

1/2 stick unsalted butter
3 c chopped sweet onions
5 c roasted pumpkin, skin removed, chunked
8 c good vegetable stock
1 tsp fresh thyme, finely minced
1/4 tsp fresh grated nutmeg
1 Tbsp agave syrup
2 c cream
sea salt and pepper to taste
1 c sour cream
1/4 tsp good curry powder
1/2 c toasted pumpkin seeds for garnish

  • 1. Cut the pumpkin in half and scrape out seeds. Cut into thick wedges, brush lightly with olive oil, sprinkle with salt and bake on a baking sheet at 350 for about an hour or until tender.

The jalapeno adds a lttle zip but is not overwhelming. I served it at a luncheon I catered and the group raved about the flavor. They asked for the recipe and I believe that is always a sign of success.

2 Tbsp butter
1 large onion chopped
1 jalapeno, seeded and finely chopped
2 garlic cloves, minced
5 c chicken broth
1 large baking potato, peeled and chopped
1 1/4 tsp salt
1/2 tsp chili powder
1/2 tsp ground cumin
1 15-oz can pumpkin
1/4 c chopped fresh cilantro
2 c milk
sour cream for garnish

Steps:

  • 1. Melt butter in a Dutch oven over medium heat. Add onion, jalapeno and garlic; saute 15 minutes. Add chicken broth and next 4 ingredients; cook, stirring often, 30 minutes or until potato is tender. Remove from heat,and let cool slightly (about 5-10 minutes)
  • 2. Process potato mixture, pumpkin and cilantro, in batches, in a food processor or blender until smooth.
  • 3. Return to Dutch oven; stir in milk and simmer 10 minutes or until fully heated. Garnish with a dollop of sour cream and cilantro if desired.

1/4 c butter or margarine
1 large onion, chopped (about 3/4 cup)
1/2 tsp curry powder
16 oz pumpkin (2 cups) not pie filling
1/4 tsp salt
2 c 1/2 and 1/2 or whole milk
2 1/2 c chicken stock
1/3 c sour cream
1/8 tsp cinnamon
minced parsley

Steps:

  • 1. Melt butter in soup pot and add the onion. Stir and cook until soft. Add curry powder and cook 2 minutes more.
  • 2. Add pumpkin and salt to the pot. Using an immersion blender, blend onions and pumpkin mixture together. Add 1/2 & 1/2 (or milk) and blend again until very smooth.
  • 3. Stir chicken stock into pumpkin mixture and heat slowly over low heat, stirring occasionally.
  • 4. In a small bowl, mix the sour cream, cinnamon and parsley.
  • 5. Serve soup with a generous dollop of sour cream mixture.

1 onion chopped
2 garlic cloves, chopped
2 pounds pumpkins, diced
4 cups stock
1 cup water
1 dash tabasco
salt to taste
pimiento strips to garnish

Steps:

  • Heat olive oil over low heat & add onion & garlic. Cook, stirring till tender. Add squash & stock, cover & simmer for 40 to 50 minutes or till the squash is very soft. In a food processor, process soup till its very smooth & return to pot. Thin with water & season. Pour into a tureen & garnish with pimento.
