Over the past 2 years I have tweaked this to be just right. Went vegan and thought you'd never have a tasty Caesar dressing again? You will be pleasantly surprised! Oil-free, totally raw (except the capers), and packed with all the health benefits of cashews! Store in a mason jar in the fridge for up to 7 days.

¾ cup raw cashews
½ cup distilled water
1 medium garlic clove
1 ½ tablespoons freshly squeezed lemon juice
½ tablespoon balsamic vinegar
½ tablespoon capers with brine
½ teaspoon sea salt

¼ teaspoon freshly cracked black pepper, or to taste

1 lemon
3/4 teaspoon Dijon mustard
3/4 teaspoon Worcestershire sauce
1 garlic clove, pressed
1/2 teaspoon black pepper
1/4 cup mayonnaise
1/2 cup vegetable oil or 1/2 cup olive oil
1/4 cup fresh parmesan cheese, grated

Steps:

  • Juice lemon to measure 2 Tablespoons juice; place in small bowl. Add mustard, worcestershire sauce, garlic and black pepper; whisk until blended. Add mayonnaise; whisk until smooth.
  • While continually whisking, add oil to mayonnaise in a thin, steady stream. Continue whisking until blended; stir in parmesan cheese. Cover; refrigerate until ready to serve. Store dressing covered in refrigerator up to 2 weeks.

1/2 cup raw cashews
1/2 cup water ((or as needed))
1/4 cup lemon juice
2 tablespoons nutritional yeast
1 tablespoon Dijon mustard
2 teaspoons capers
1 clove garlic

Steps:

  • If you have a high-powdered blender you can skip straight to step 2. If you have a regular blender, you may want to soften the cashews first to ensure they blend smoothly. To do this add the cashews to a small pot and cover with water. Bring to a boil and cook for about 10 minutes until the cashews are very tender. Drain and rinse with cold water before using.
  • Add the cashews to your blender along with all the remaining ingredients and blend until completely smooth, stopping to scrape the sides as needed. For a thicker dressing, use less water. Store in an air-tight container in the fridge for up to a week. The dressing gets thicker as it cools, great for dipping! If needed you can always add more water to thin as desired.

½ cup water, or more as needed
¼ onion
2 tablespoons olive oil
1 lime, juiced
2 cloves garlic, peeled
½ teaspoon dried basil
