This is one of my favorite breakfast recipes to make on a lazy Sunday morning, although it comes together very quickly. I recently discovered Thomas' Bagel Thins, which work perfectly for this recipe. They are nice and thin, but any type bread of your preference would work too.

SCRAMBLED EGGS RECIPE WITH DILL

Scrambled Eggs Recipe With Dill image

Scrambled eggs should be soft, creamy and gently scrambled. A quality non-stick pan and silicon spatula are really useful. It's important that you use low heat and don't forget about the chance of carryover cooking. Eggs are delicate and cook very quickly. Even over low heat eggs can go from liquid to overcooked in seconds. You want to take the pan off of the heat before your eggs have finished cooking. Give the eggs a few seconds in the hot pan (off the heat) and you'll find the eggs turn out to be perfectly cooked - not dry, not too wet.

Time 15m

Yield Makes 3 to 4 servings

Number Of Ingredients 6

1 tablespoon butter
6 large eggs
1 tablespoon chopped fresh dill, plus more for serving
1/8 teaspoon sea salt, or more to taste
1 tablespoon mascarpone cheese or substitute cream cheese or fresh goat cheese
Fresh ground black pepper

Steps:

  • Melt the butter in a medium non-stick pan over medium-low heat.
  • Crack eggs into a bowl, add the dill and a pinch of salt, and then whisk until well blended.
  • When the butter begins to bubble, pour in the eggs and immediately use a silicon spatula to swirl in small circles around the pan, without stopping, until the eggs look slightly thickened and very small curds begin to form, about 30 seconds. Change from making circles to making long sweeps across the pan until you see larger, creamy curds; about 20 seconds.
  • When the eggs are softly set and slightly runny in places, remove the pan from the heat and then stir in the cheese. Serve with an extra sprinkle of salt, a grind of black pepper and more dill (if desired).

SCRAMBLED EGGS WITH ONIONS AND SMOKED SALMON

Categories     Egg     Fish     Herb     Onion     Breakfast     Brunch     Quick & Easy     Cream Cheese     Salmon     Summer     Chive     Dill     Bon Appétit

Yield Serves 4

Number Of Ingredients 9

8 large eggs
1 1/2 tablespoons chopped fresh dill or chives
1/2 teaspoon salt
1/4 teaspoon pepper
1 tablespoon butter
3/4 cup thinly sliced Vidalia onion
2 tablespoon cream cheese
Sour cream (optional)
3 ounces smoked salmon, cut into 1/2-inch-wide strips

Steps:

  • Whisk eggs, 1 tablespoon dill, salt and pepper to blend in large bowl. Melt 1 tablespoon butter in medium nonstick skillet over medium-high heat. Add onion and sauté until beginning to soften and color, about 3 minutes. Add egg mixture; reduce heat to medium and stir until eggs are barely set, about 2 minutes. Dot eggs with bits of cream cheese; continue cooking until eggs are softly set and cheese melts, about 2 minutes. Transfer to platter. Top with dollop of sour cream, if desired. Garnish with salmon. Sprinkle with remaining 1/2 tablespoon dill.

Tips:

  • Choose the right pan: For the best-scrambled eggs, opt for a nonstick skillet or well-seasoned cast-iron pan. This will help prevent the eggs from sticking and burning.
  • Use fresh, high-quality ingredients: The quality of your ingredients will greatly impact the taste of your scrambled eggs. Use fresh, organic eggs, and choose high-quality smoked salmon and dill.
  • Don't overcrowd the pan: When cooking scrambled eggs, it's important not to overcrowd the pan. This will make it difficult for the eggs to cook evenly and will result in rubbery eggs.
  • Cook the eggs slowly and gently: The key to creamy scrambled eggs is to cook them slowly and gently over low heat. This will help them cook evenly and prevent them from becoming dry or overcooked.
  • Stir the eggs frequently: Stirring the eggs frequently while they cook will help them cook evenly and prevent them from forming large curds.
  • Season the eggs to taste: Once the eggs are cooked, season them to taste with salt, pepper, and any other desired seasonings.

Conclusion:

Creamy scrambled eggs with dill and smoked salmon is a delicious and versatile dish that can be enjoyed for breakfast, lunch, or dinner. It's a great way to use up leftover smoked salmon, and it's also a great source of protein and healthy fats. Whether you're a seasoned chef or a beginner in the kitchen, this recipe is sure to impress. So next time you're looking for a quick and easy meal, give creamy scrambled eggs with dill and smoked salmon a try.
