SPINACH ROLLS WITH PUFF PASTRY

Spinach Rolls with Puff Pastry image

A vegetarian version of mini sausage rolls but made with a spinach and feta filling. I used frozen spinach because it was a better buy than fresh at the time but the equivalent amount of fresh spinach, chopped and wilted, would do the job.

Tips:

  • To make the spinach filling, you can use fresh or frozen spinach. If using frozen spinach, thaw it completely and squeeze out any excess water before using.
  • For a creamier filling, use a combination of cream cheese and sour cream. You can also add a little bit of grated Parmesan cheese for extra flavor.
  • If you don't have any phyllo dough on hand, you can use puff pastry instead. However, keep in mind that puff pastry will result in a more flaky and less crispy roll.
  • To make sure the rolls are cooked through, insert a toothpick into the center of one of the rolls. If the toothpick comes out clean, the rolls are done.
  • Serve the rolls warm with your favorite dipping sauce. Some popular options include marinara sauce, Alfredo sauce, or ranch dressing.
