Categories     Soup/Stew     Milk/Cream     Bean     Sauté     Sausage     Celery     Carrot     Winter     Bon Appétit

Yield Makes 6 main-course servings

Number Of Ingredients 13

1 pound dried cannellini or Great Northern beans (generous 2 cups)
8 cups water
3 tablespoons extra-virgin olive oil, divided
3 garlic cloves; 1 smashed, 2 chopped
1 large fresh rosemary sprig
1 bay leaf
1 large onion, coarsely chopped (about 2 cups)
1 large carrot, coarsely chopped (about 1 cup)
1 large celery stalk, coarsely chopped (about 3/4 cup)
2 1/2 teaspoons finely chopped fresh thyme, divided
4 cups (or more) low-salt chicken broth
1 pound fresh chorizo link sausages, casings removed
1/4 cup whipping cream

Steps:

  • Place beans in heavy large saucepan. Add enough water to pan to cover beans by 4 inches. Let beans soak overnight at room temperature.
  • Drain and rinse beans; return to same saucepan. Add 8 cups water, 1 tablespoon oil, smashed garlic clove, rosemary, and bay leaf. Bring to boil. Reduce heat to medium-low, partially cover, and simmer until beans are just tender, 1 to 11/2 hours. Season to taste with salt. (Can be prepared 2 days ahead. Cool slightly, cover, and chill.)
  • Drain beans, reserving cooking liquid. Discard rosemary sprig and bay leaf. Heat remaining 2 tablespoons oil in heavy large pot over medium heat. Add onion, carrot, and celery. Sprinkle with salt and pepper. Sauté until vegetables are beginning to soften, about 10 minutes. Add chopped garlic and 1 teaspoon thyme; sauté 2 minutes. Add 2 cups reserved bean cooking liquid, 4 cups chicken broth, and beans. Bring to boil; reduce heat to medium and simmer uncovered until vegetables are tender, about 25 minutes. Cool soup 10 minutes. Meanwhile, sauté chorizo in heavy large skillet over medium-high heat until cooked through, breaking up lumps with back of spoon, about 5 minutes. Transfer chorizo to paper towels to drain.
  • Using slotted spoon, remove 1 1/2 cups bean mixture from soup; reserve. Working in batches, puree remaining soup in blender until smooth. Return puree to pot. Stir in reserved whole-bean mixture, remaining 1 1/2 teaspoons thyme, chorizo, and cream. (Can be made 1 day ahead. Chill uncovered until cold. Cover and keep chilled.) Rewarm soup over medium heat, thinning with more broth if desired. Season with salt and pepper. Divide soup among bowls and serve.

CREAMY WHITE BEAN SOUP WITH SPICY PAPRIKA OIL

Creamy White Bean Soup With Spicy Paprika Oil image

As easy as it is fast, this simple blended white bean soup relies upon cheap staples like canned beans, stock, garlic, olive oil, shallots and dried herbs. An artful drizzle of paprika oil enlivens it. While the soup simmers, toast red-pepper flakes and smoked paprika in olive oil to make a vibrant red sauce inspired by Chinese chile oil. The soup is great before blending - it's more like a stew - but purées to a creamy white. You could top the soup with sautéed quartered button mushrooms, roasted vegetables or toasted croutons, but the paprika oil provides deep flavor, and is the only garnish you truly need.

Time 30m

Yield 4 to 6 servings (8 cups)

Number Of Ingredients 14

1/4 cup extra-virgin olive oil
3 large shallots, minced (about 2/3 cup)
4 large celery stalks, peeled and thinly sliced
5 garlic cloves, minced
3 teaspoons dried Italian seasoning or herbes de Provence
1 1/2 teaspoon fennel seeds (optional)
3/4 teaspoon finely chopped fresh rosemary (optional)
Kosher salt and black pepper
6 cups chicken or vegetable stock
3 (14-ounce) cans cannellini beans (or chickpeas), rinsed
2 cups half-and-half or almond milk
1/3 cup extra-virgin olive oil
1 1/2 teaspoons smoked (hot or sweet) paprika
1/2 teaspoon red-pepper flakes

Steps:

  • Prepare the soup: In a large pot, heat 1/4 cup oil over medium. Add the shallots, celery, garlic, Italian seasoning, fennel seeds (if using) and rosemary (if using); season with salt and pepper. Cook, stirring occasionally, until tender, about 10 minutes, reducing the heat to medium-low if needed to avoid browning the vegetables.
  • Add the stock and rinsed beans, and bring to a boil over high. Once the mixture comes to a boil, cook over medium-high until flavors meld and stock thickens, about 15 minutes.
  • While the soup cooks, prepare the paprika oil: Heat 1/3 cup oil in a small skillet over the lowest heat on your smallest burner. Add the paprika and red-pepper flakes and cook, stirring frequently, just until toasted and flavors bloom, 1 to 2 minutes. Strain, discarding flakes, then set paprika oil aside.
  • Working in batches if needed, transfer the soup to a blender and purée until smooth, adding half-and-half or almond milk to thin to desired consistency. Season to taste with salt and pepper.
  • Divide among bowls and drizzle with strained paprika oil to serve.

CREAMY WHITE BEAN & ITALIAN SAUSAGE SOUP

Creamy White Bean & Italian Sausage Soup image

This recipe was in a little recipe pamphlet DH received in the mail. I added extra seasonings and increased the cooking times. I served it with hot crusty sourdough bread and it made a wonderful cold weather soup. As an added bonus using canned beans makes it a very quick and easy dish to put together. I like using the parmesean cheese and DH likes the extra "kick" of the crushed red peppers.

CREAMY TUSCAN WHITE BEAN SOUP

Creamy Tuscan White Bean Soup image

Garlic and rosemary give this creamy soup an unmistakably Tuscan vibe.

Provided by Kare for Kitchen Treaty

Time 40m

Number Of Ingredients 10

2 tablespoons olive oil
1/2 medium yellow onion (diced) (about 1 cup)
1/4 teaspoon kosher salt + more to taste
1/8 teaspoon freshly ground black pepper + more to taste
4 medium cloves garlic (minced)
2 15-ounce cans + 2 (15-ounce) cans cannellini beans, drained and rinsed, divided
4 cups low-sodium vegetable broth
2 teaspoons chopped fresh rosemary
1/2 cup heavy whipping cream (optional; omit for a vegan version)
Additional olive oil and fresh chopped rosemary for garnish (if desired)

Steps:

  • In a medium saucepan over low heat, add the olive oil. When hot, add the onion and 1/4 teaspoon salt. Cook, stirring occasionally, until the onion is translucent and tender, about 10 minutes.
  • Add the garlic and cook, stirring, for another minute.
  • Add 2 cans cannellini beans, vegetable broth, and rosemary. Increase heat to high and bring to a boil. Reduce to a simmer and cook, uncovered, for 15 minutes.
  • Remove from heat and allow mixture to cool to a safe temperature for pureeing. Using an immersion blender or transferring the soup to a blender in batches, completely puree mixture. If the soup seems too thick, add additional broth (the soup should be thinner than baby food but thicker than a brothy soup).
  • Return to medium-low heat. Stir in the remaining two cans beans and, if using, the heavy whipping cream. Return to a simmer.
  • Taste and season with additional kosher salt and freshly ground pepper if desired. Serve with additional chopped fresh rosemary and a drizzle of olive oil if you like.

Tips:

  • Soak the beans overnight: Soaking the beans overnight helps to soften them and reduce their cooking time. It also helps to remove some of the gas-producing compounds, making the soup easier to digest.
  • Use a variety of beans: Don't be afraid to experiment with different types of beans. Cannellini beans, Great Northern beans, and navy beans are all good choices for this soup. You can also use a mix of beans.
  • Sauté the vegetables before adding them to the soup: Sautéing the vegetables helps to bring out their flavor and add depth to the soup. It also helps to prevent the vegetables from becoming mushy.
  • Use a good quality broth: The broth is the base of the soup, so it's important to use a good quality broth. You can use chicken broth, vegetable broth, or even water. If you're using water, you may want to add some additional seasonings, such as salt, pepper, and garlic powder.
  • Season the soup to taste: Once the soup is cooked, taste it and adjust the seasonings to your liking. You may want to add more salt, pepper, garlic powder, or other spices.

Conclusion:

Creamy white bean soup is a delicious, hearty, and healthy soup that is perfect for a cold winter day. It's also very easy to make and can be made with a variety of ingredients. So next time you're looking for a quick and easy meal, give this creamy white bean soup a try.
