1/2 gallon vanilla ice cream
30 Oreo cookies
3 (1 ounce) baker's unsweetened chocolate squares
3 eggs, well beaten
2 cups confectioners' sugar
1/4 cup butter
1/3 cup creme de menthe

Steps:

  • Crush 20 oreos and place in 9x13 pan. Melt margarine and chocolate over medium heat. Remove & add beaten eggs & sugar. Pour over Oreo crumbs. Freeze for 1/2 hour. While waiting, combine ice cream with creme de'menthe until well combined. Pour over frozen crust. Sprinkle with remaining 10 crushed Oreos. Refreeze and serve.

8 scoops vanilla ice cream
Homemade Chocolate Sauce, recipe follows
Creme de menthe syrup, for drizzling
1/2 cup raspberries
3 tablespoons honey
1/2 cup Dutch-process cocoa powder
Pinch kosher salt
1 teaspoon vanilla

Steps:

  • Add 2 scoops of ice cream to 4 bowls. Drizzle each with some of the Homemade Chocolate Sauce and creme de menthe syrup. Top with a few of the raspberries. Serve immediately.
  • Put 3/4 cup water and the honey in a saucepan and bring to a boil over medium heat, stirring so that the honey dissolves; remove from the heat.
  • Add the cocoa powder and salt to a heatproof bowl. Add a few tablespoons of the honey-water mixture to the cocoa powder. Whisk to create a thick but smooth liquid. Add the cocoa mixture back to the remaining honey-water mixture in the pan. Bring the whole mixture up to a simmer and let cook until slightly thickened, about 3 more minutes. Stir in the vanilla. Let cool completely, then refrigerate (the sauce thickens as it cools and chills).

1 teaspoon unflavored gelatin

1 package (3.9 ounces) instant chocolate pudding mix
1 cup heavy whipping cream

  • In a small bowl, mix crushed cookies and melted butter. Reserve 3 tablespoons for topping. Press remaining mixture onto bottom of a greased 8-in. square baking dish. This was also his first paid 'catering' job for a graduation party when he was 12 (he's married now, so that gives you a clue as to how long I've had this recipe). Great brownies with a mint flavored filling.

1 cup white sugar
1 cup butter, softened
4 eggs
1 cup all-purpose flour
½ teaspoon salt
1 (16 ounce) can chocolate syrup
1 tablespoon vanilla extract
2 cups confectioners' sugar
½ cup butter, softened
¼ cup creme de menthe liqueur
1 cup semisweet chocolate chips
6 tablespoons butter

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease one 9x13 inch baking dish.
  • Beat the white sugar with 1 cup of the butter or margarine until light and fluffy. Beat in the eggs. Then stir in the flour, salt, chocolate syrup and vanilla. Mix until combined.

3/4 cup superfine sugar (caster sugar)
4 large egg yolks
2 cups whole milk
1 tablespoon vanilla
3/4 cup heavy cream
1/4 cup creme de menthe

Steps:

  • Set aside a large bowl of ice water.
  • In a saucepan, bring milk and half of sugar to a simmer, stirring until sugar is dissolved. Add crème de menthe.
  • In another bowl, mix or whisk yolks and remaining sugar until thick and pale. To this add hot milk slowly, whisking, and pour mixture back into saucepan when finished.
  • Cook over moderately low heat, stirring constantly, for approx 20 minutes. (170F) Do not allow mixture to boil!

  • Remove from freezer and whisk with a hand blender to break up any ice crystals.
  • Return to freezer.
  • Repeat process one to three more times until it reaches desired smoothness.
  • Garnish with mint leaves or shaved chocolate.

3/4 cup margarine, softened
1/2 cup sugar
1 large egg, room temperature
2 cups all-purpose flour
1/2 teaspoon salt
FILLING/FROSTING:
2 cups confectioners' sugar
4 to 5 tablespoons green creme de menthe
1 cup semisweet chocolate chips

Steps:

  • In a large bowl, cream margarine and sugar until light and fluffy, 5-7 minutes. Beat in egg. In another bowl, whisk flour and salt; gradually beat into creamed mixture. Divide dough in half. Shape each into a disk. Cover and refrigerate 1 hour or until firm enough to roll., Preheat oven to 325°. Roll each portion of dough between 2 sheets of waxed paper to 1/4-in. thickness (dough will be soft). Cut with a floured 2-in. round cookie cutter. Place 2 in. apart on ungreased baking sheets. Bake until set, 7-8 minutes. Remove from pans to wire racks to cool completely., In a small bowl, mix confectioners' sugar and enough creme de menthe to reach a spreading consistency.
