BAKED CREPES WITH RICOTTA

Baked Crepes With Ricotta image

This is from "Lidia's Italian Table" cookbook (Lidia Matticchio Bastianich). She is one of my all-time favorites! If you can get to one of her restaurants (I went in Kansas City), you will not be sorry. These crepes are absolutely delicious!

Time 35m

Yield 12 crepes, 6 serving(s)

Number Of Ingredients 10

1 lb ricotta cheese
12 crepes
6 tablespoons unsalted butter, melted
1 cup granulated sugar
2 large eggs
2 lemons, zest of
1 pinch freshly grated nutmeg
1 1/2 cups golden raisins
1/4 cup limoncello or 1/4 cup other lemon liqueur
confectioners' sugar, for dusting

Steps:

  • Place the ricotta in a fine-mesh sieve or colander lined with cheesecloth. Cover with plastic wrap and let drain in the refrigerator for at least 12 hours, or up to 24 hours.
  • Make the crepes.
  • Preheat the oven to 350. Brush an 11 x 8 inch baking dish with some melted butter.
  • In large bowl, whisk the granulated sugar and eggs together until pale yellow and smooth. Add the ricotta, lemon zest, and nutmeg and beat lightly until blended. Fold in the raisins.
  • Place a crepe, lacy side down, on the work surface. Spread about 1/4 cup of ricotta mixture over the crepe and roll the crepe up like a jelly roll. Place the crepe, seam side down, in the buttered baking dish. Repeat with the remaining crepes and filling, arranging them side by side in the dish.
  • In a small bowl, whisk the remaining melted butter and the liqueur together until blended and pour over the crepes. Bake until the filling is warmed through and the liquid in the dish is bubbling, about 20 minutes. Transfer the crepes to serving plates, spooning some of the butter sauce over each serving. Sprinkle with confectioners' sugar and serve immediately.

Tips:

  • Mise en Place: Before you start cooking, make sure you have all of your ingredients and equipment ready. This will help you stay organized and avoid scrambling.
  • Use Fresh Ingredients: The fresher your ingredients, the better your crepes will taste. If possible, use organic or locally-sourced ingredients.
  • Don't Overmix the Batter: Overmixing the batter will make your crepes tough. Mix just until the ingredients are combined.
  • Cook the Crepes Over Medium Heat: Medium heat is the best temperature for cooking crepes. If the heat is too high, the crepes will burn before they are cooked through. If the heat is too low, the crepes will take too long to cook and will be rubbery.
  • Flip the Crepes Carefully: When flipping the crepes, use a spatula that is thin and flexible. This will help you avoid tearing the crepes.
  • Fill the Crepes Immediately: Once the crepes are cooked, fill them immediately with your desired filling. This will help prevent the crepes from drying out.
  • Serve the Crepes Hot: Crepes are best served hot. If you are making them ahead of time, reheat them in a warm oven or microwave before serving.

Conclusion:

Crespelle with ricotta and marinara is a rich and flavorful appetizer or main course. With a few simple ingredients and a little bit of time, you can easily make this dish at home. Whether you are a beginner or an experienced cook, I encourage you to give this recipe a try. You won't be disappointed!
