Time 1h

Number Of Ingredients 5

1/4 c olive oil, extra virgin
salt and pepper
2 lb small yukon gold potatoes, halved
6 medium garlic cloves, thinly sliced
2 Tbsp finely chopped parsley

Steps:

  • 1. Brush a baking sheet with 1 tbsp. of the oil and sprinkle with salt and pepper. Arrange the gold potatoes on the baking sheet, cut side down, and bake at 400 degrees for 45 minutes. Transfer potatoes to a bowl.
  • 2. Heat the remaining 3 tbsp. of oil in a large skillet. Add the garlic and cook over moderately low heat, stirring, until crisp; do not let garlic get too brown.
  • 3. Pour the garlic and oil over the potatoes, add the parsley and toss. Season with salt and pepper and serve at once.

Tips:

  • For the crispiest potatoes, use Yukon Gold potatoes. They have a higher starch content than other varieties, which helps them brown and crisp up nicely.
  • Make sure the potatoes are cut into uniform pieces. This will help them cook evenly.
  • Toss the potatoes with a generous amount of olive oil. This will help them crisp up and prevent them from sticking to the pan.
  • Don't overcrowd the pan. If the potatoes are too crowded, they will steam instead of roast and won't get crispy.
  • Roast the potatoes at a high temperature. This will help them brown and crisp up quickly.
  • Flip the potatoes halfway through cooking. This will ensure that they cook evenly on all sides.
  • Season the potatoes with salt, pepper, and garlic powder. You can also add other herbs and spices, such as rosemary, thyme, or paprika, to taste.
  • Serve the potatoes immediately. They are best when they are hot and crispy.

Conclusion:

Crispy Garlic Yukon Gold Potatoes are a delicious and easy side dish that can be enjoyed by people of all ages.
