BLACK BEAN AND CORN SOUP image

Yield Makes 8 large servings

Number Of Ingredients 10

3 cloves garlic,crushed
1 small yellow onion,diced
1 8oz can fire roasted green chilis,diced
1 16oz can vegetable or chicken broth
1 16oz can diced Mexican style diced tomatoes
1 16oz can corn
1 16oz can black beans
pinch of cilantro
sour cream
zatarains Cajun Seasoning

Steps:

  • 1. Saute onion and garlic in 1Tbl. oil until translucent. 2. Add green chilis and broth. 3. Bring to simmer. 4. Add diced tomatoes. 5. Add 1/4 can corn. 6. Add 1/4 can black beans. 7. Simmer 15 minutes. 8. Transfer to blender and pulse two-three times (leave a little texture) 9. Pour soup back into pot. 10. Add remainder black beans and corn. 11. Add 1 tsp. Zatarains Cajun Seasoning and pinch of cilantro. 12. Serve warm with dollop of sour cream.
