BAKED CRISP PARMESAN ROMANO CHICKEN

Baked Crisp Parmesan Romano Chicken image

Our Italian-style baked chicken parmesan, served with a simple salad, gets its flavor from two cheeses. Along with Parmesan and Romano, the coating consists or oregano, parsley, olive oil, red-wine vinegar, and breadcrumbs made from cubes of crusty white bread.

Time 25m

Yield 4 servings

Number Of Ingredients 15

2 red bell peppers (or 1 red and 1 yellow)
1/2 cup Marcona almonds or blanched raw almonds
1/2 cup chicken stock
1/2 cup fresh flat-leaf parsley leaves
Zest and juice of 1 lemon
Zest and juice of 1 orange
2 large cloves garlic, crushed
1 Fresno chile pepper
1/2 red onion, coarsely chopped
1 large heirloom tomato
2 tablespoons EVOO
8 bone-in chicken thighs
1 teaspoon smoked sweet paprika
Salt and freshly ground pepper
1/2 cup dry sherry

Steps:

  • Char the bell peppers under a broiler or over a gas flame, turning occasionally. Place the peppers in a bowl, cover with plastic wrap and let cool. Peel off the charred skin and remove the seeds.
  • Meanwhile, toast the almonds in a pan or in the oven until golden, then let cool.
  • Place the roasted bell peppers in a food processor along with the almonds, chicken stock, parsley, lemon and orange zest and juice, the garlic, chile pepper and red onion. Grate the tomato on the large holes of a box grater. Discard the skin and add the tomato pulp to the food processor. Puree until smooth.
  • Meanwhile, heat the EVOO in a large skillet over medium-high heat. Sprinkle the chicken with paprika, salt and pepper and cook until browned, 3 to 4 minutes per side. Add the sherry to the skillet and scrape up any browned bits from the bottom with a wooden spoon. Stir in the roasted pepper sauce, reduce the heat and simmer, partially covered, until the chicken is cooked through, 10 to 12 minutes. Transfer the chicken to plates and spoon the sauce over top.

Tips:

  • To achieve crispy chicken, ensure the chicken is patted dry before cooking. This helps remove excess moisture, allowing the chicken to crisp up nicely.
  • Use a heavy-bottomed skillet or pan for even heat distribution and to prevent burning. Cast iron or stainless steel skillets are good choices.
  • Maintain the oil temperature between 350°F (175°C) and 375°F (190°C) for optimal frying. Use a thermometer to monitor the temperature accurately.
  • Avoid overcrowding the pan with chicken pieces. This can cause the oil temperature to drop, resulting in soggy chicken.
  • Cook the chicken in batches if necessary to prevent overcrowding and ensure even cooking.
  • Use a meat thermometer to check the internal temperature of the chicken. The safe internal temperature for cooked chicken is 165°F (74°C).
  • For the Romano sauce, use freshly grated Parmesan cheese for the best flavor and texture. Grating the cheese yourself ensures it melts smoothly into the sauce.
  • Adjust the seasonings in the Romano sauce to your taste preference. You can add more garlic, lemon juice, or red pepper flakes for a bolder flavor.
  • Serve the crispy chicken Romano immediately with the prepared Romano sauce and your choice of sides, such as pasta, rice, or roasted vegetables.

Conclusion:

Crispy chicken Romano is a delectable dish that combines crispy chicken cutlets with a flavorful Romano sauce. This recipe provides step-by-step instructions to guide you through the cooking process, ensuring you achieve crispy chicken and a creamy, tangy sauce.
