- For the sauce: In a medium sauce pan, cook over medium heat the olive oil and garlic to slightly soften; do not let it brown. Add the honey, soya sauce and black pepper. Continue to cook over medium heat and simmer sauce for 5-10 minutes, watching carefully as it simmers because it can foam up and overflow. Remove from heat and allow to cool thoroughly; set aside.
- The coating: Mix together the 'coating mixture'; set aside.
- The wash: In a seperate bowl, whisk together the slightly beaten eggs and cold water.
- Wash and pat dry the wing sections. Dip the wing pieces into the egg wash and then toss into the flour mixture to evenly coat.
- Drop the coated wings into a preheated 350 degree F deep fryer, filled with vegetable oil.

- Preheat oven to 425 degrees F (220 degrees C). Line a baking sheet with aluminum foil and place an oven-proof wire rack over the foil.
- Whisk baking powder, salt, black pepper, and paprika together in a small bowl. Place chicken wings in a large bowl. Sprinkle 1/2 of the baking powder mixture over wings and toss to coat. - Preheat oven to 425°F. Dab wings with paper towels until completely dry.
- Toss wings with flour, salt and pepper. Remove any excess flour and brush with olive oil (or use an olive oil spray).
- Line a pan with foil and then place parchment paper on top (you may need 2 pans) and for bake 35 minutes, turning at 20 minutes.
- Meanwhile, combine sauce ingredients in a small pan. Bring to a boil, reduce heat and simmer about 10 minutes or until slightly thickened and sauce coats the back of a spoon.

- Mix all the sauce ingredients and simmer on low heat till thickened. Set aside.
- If making the lighter version of sauce. Mix ingredients together and microwave for 10 -20 secs and set aside.
- Cut wings into sections (drumettes, wingettes and tips) if you didn't buy the already sectioned ones. Discard the tips.
- Wash and pat dry with paper towel. Drizzle oil on the wings, add salt, black pepper and garlic. Toss to combine.
- Transfer seasoned wings into air fryer basket. Set temperature to 400°F / 204°C and air fryer for 20 to 25 mins. Remember to shake basket or flip wings half way through baking time. The internal temperature should be at least 165°F / 74°C
