1/4 cup jarred pesto
2 burrito-size spinach tortillas
2 burrito-size whole wheat tortillas
2 burrito-size jalapeno-Cheddar tortillas
1 cup spinach leaves, chopped
One 6-ounce jar marinated artichoke hearts, chopped
1/4 cup sliced green olives
1/4 cup sliced sun-dried tomatoes
4 slices Swiss cheese
8 large slices pepperoni
8 large slices salami
8 large slices spicy capicola
4 slices pepper jack cheese
1 cup arugula
6 mini sweet peppers, slice thin
1/2 cup chopped hot cherry peppers

Steps:

  • For the base spread and tortillas: Mix together the cream cheese and pesto until well combined. Using a spoon or offset spatula, spread the mixture all the way to the edges of each tortilla.
  • For the veggie pinwheels: Evenly distribute the spinach over the top of the base spread on the spinach tortillas. Arrange the artichokes, green olives and sun-dried tomatoes over the spinach. Roll up the tortillas tightly and individually wrap in plastic. Set aside.
  • For the meaty pinwheels: Shingle the cheese, pepperoni, salami and capicola onto the base spread on the whole wheat tortillas, slightly favoring one side. Roll up the tortillas tightly and individually wrap in plastic. Set aside.
  • For the spicy pinwheels: Divide the pepper jack between the jalapeno-Cheddar tortillas topped with the base spread. Divide the arugula, sliced peppers and chopped cherry peppers between the tortillas. Roll up the tortillas tightly and individually wrap in plastic. CHEDDAR AND BACON PINWHEELS

Cheddar and Bacon Pinwheels image

Provided by Jeff Mauro, host of Sandwich King

Categories     appetizer

Time 40m

Yield 24 pinwheels

Number Of Ingredients 8

8 slices bacon
6 ounces cream cheese, at room temperature
6 scallions, green part only, thinly sliced
Kosher salt and freshly ground black pepper
2 sheets frozen puff pastry (from a 17.3-ounce package), thawed
All-purpose flour, for dusting
4 ounces Cheddar, grated
1 large egg

Steps:

  • Preheat the oven to 375 degrees F. Line 2 baking sheets with parchment paper.
  • Cook the bacon in a large skillet over medium-high heat until crispy, 5 to 8 minutes. Remove to a paper towel-lined plate to drain and allow to cool slightly, then finely chop. Set aside.
  • In a small bowl, stir together the cream cheese and scallions. Season with salt and pepper.
  • Unfold the pastry sheets on a lightly floured work surface. Lightly roll each piece of pastry into a 10-inch square. Spread the cream cheese mixture over the entire surface of each piece of pastry, leaving a slight border around the edges. Sprinkle the Cheddar and bacon in an even layer over the top of the cream cheese mixture. Tightly roll each pastry sheet into a log (jelly roll style), then pinch the seam closed and place seam-side down on the work surface.
  • Using a sharp knife, cut both logs crosswise into 12 pinwheels each, approximately 1 inch thick. Transfer 12 pinwheels to each prepared baking sheet, spiral-side up. In a small bowl, whisk the egg and 1 tablespoon water until combined to make an egg wash. Brush the tops and sides of the pinwheels with the egg wash.
  • Bake the pinwheels until puffed and golden, 25 to 30 minutes. Serve warm.

Tips:

  • Use fresh mushrooms. Fresh mushrooms will have a better flavor and texture than canned or dried mushrooms.
  • Chop the mushrooms finely. This will help them to cook evenly and to distribute their flavor throughout the pinwheels.
  • Use a variety of cheeses. This will give the pinwheels a more complex flavor. Some good options include cream cheese, cheddar cheese, and Parmesan cheese.
  • Add some herbs or spices to the filling. This will help to enhance the flavor of the pinwheels. Some good options include garlic, onion powder, and paprika.
  • Be careful not to overcook the pinwheels. Overcooked pinwheels will be tough and dry.
  • Serve the pinwheels warm or at room temperature. They can be served as an appetizer, main course, or snack.

Conclusion:

Crispy mushroom pinwheels are a delicious and easy-to-make appetizer or snack. They are perfect for parties or potlucks. With a few simple ingredients, you can create a tasty and satisfying dish that everyone will love. So next time you are looking for a quick and easy recipe, give crispy mushroom pinwheels a try.
