20 ounces pineapple chunks in juice
2 cloves garlic, minced
1 tablespoon cornstarch
1 teaspoon Worcestershire sauce
2 teaspoons Dijon mustard
1 teaspoon dried rosemary
1 teaspoon salt
1 lemon, thinly sliced
6 chicken breast halves (Use 3 whole chicken breasts, split to make 6 halves)

Steps:

  • Drain pineapple; combine the juice with garlic, cornstarch, Worcestershire sauce, mustard and rosemary.
  • Set aside. Arrange chicken in shallow pan, skin side up.
  • Sprinkle with salt. Broil until browned.
  • Stir the sauce and pour over the chicken.
  • Bake at 350 degrees for about 25 minutes, depending on thickness of chicken.
  • Arrange pineapple and thin lemon slices around chicken, baste with the sauce in pan and continue baking 5 minutes longer.

4 chicken breast halves (with bone)
1 (20 ounce) can crushed pineapple
1 small lemon, very thinly sliced
1/3 cup ketchup
1/3 cup honey
1 tablespoon Worcestershire sauce
2 garlic cloves, minced
1 teaspoon salt
1/4 teaspoon dried rosemary, crushed
1 teaspoon cornstarch

Steps:

  • Place chicken in a resealable plastic bag set in a large bowl.
  • Drain pineapple, reserving 1/4 cup juice. Combine pineapple, reserved juice, and next seven ingredients. Pour mixture over chicken; seal bag. Marinate in the refrigerator for 2 to 24 hours, turning bag occasionally. Drain, reserving marinade.
  • Prepare grill for indirect grilling. Test for medium heat above drip pan. Place chicken, bone sides down, on grill rack over drip pan. Brush with some of the marinade. Cover and grill for 50 to 60 minutes or until no longer pink, turning and brushing once with about 1/4 cup marinade.
  • Combine the remaining marinade and cornstarch. Cook and stir until bubbly. Cook and stir for 2 minutes more. Serve over chicken.

2 broiler/fryer chickens (2 to 3 pounds each), cut up or 16 pieces of chicken
3-1/2 teaspoons salt, divided
2 to 3 tablespoons lemon juice
1 cup all-purpose flour
1 teaspoon paprika
1/8 teaspoon pepper
Oil for deep-fat frying
2 tablespoons hot water

500grams boneless, skinless chicken
1 egg
1/2 teaspoon of salt
1/2 teaspoon of pepper
1 tablespoon vegetable oil
85g plain flour
2 tablespoons corn flour
oil (for frying) + 1 tablespoon sesame oil
1/2 teaspoon minced garlic
1/2 teaspoon grated lemon rind
80ml fresh lemon juice
1 spring onion chopped
2 lemon segments
1/2 tablespoon corn flour
60ml hoi sin sauce with five spice (Sharwoods)
Dash cayenne pepper
2 tablespoons sugar
Salt and Pepper to taste

Steps:

  • Cut your chicken into 2 inch pieces and put them into a large bowl.
  • Add in the egg, salt, pepper and oil. Mix it well and set aside.
  • In another large bowl, stir in the corn flour and plain flour plus one teaspoon of salt and pepper
  • And mix it well set aside.
  • Add the chicken into the flour mix and coat each piece generously.
  • Pour about a 1/2 inch of oil plus the sesame oil into a Wok and set it over high heat.
  • When the temperature is 375 degrees,
  • Carefully put some chicken pieces in small batches and fry for 4 minutes
  • Carefully remove the chicken from the oil with a slotted spoon and drain it on paper towels,
  • Finish frying the chicken until they're all done.
  • Set aside keep warm and put together your glaze in the next step.
  • Method Glaze:
  • Let your oil cool slightly in the wok
  • Remove all but 2 tablespoons of oil and put it over medium heat.
  • Saute the minced garlic for a minute, being careful not to burn it
  • Add the rest of the ingredients in and bring the mixture to a boil.
  • Add 1/2 tablespoon corn flour mixed with a little cold water
  • Make sure to stir this for 3 minutes
  • Reduce the heat and simmer it until a saucy thick glaze is created.
  • Pour the glaze over the chicken and serve!
  • Scatter the Spring onion and lemon segments
