Time 30m

Yield 8 servings

Number Of Ingredients 6

1/2 cup water
6 tablespoons distilled white vinegar, preferably a Thai brand
1 cup sugar
1 teaspoon kosher salt
7 red Thai chiles, fresh or freshly frozen, or canned pickled Thai red chiles
8 cloves garlic, smashed and peeled

  • To a small saucepan, add water, vinegar, and sugar; bring to a simmer over medium-high heat. Meanwhile, roughly slice chiles and garlic. Place in a food processor with salt and pulse to a rough chop; add to the pot. Turn heat to low to maintain a steady simmer and cook, uncovered, until the liquid thickens slightly and becomes just slightly syrupy, 8-12 minutes. Cool to room temperature. The sauce will thicken further as it cools. Makes ¾ cup. You can store it in the refrigerator in a sealed container for months; the flavor improves as the ingredients continue to meld.

Categories     Condiment/Spread     Pepper     Side     Cocktail Party     Quick & Easy     Backyard BBQ     Vinegar     Hot Pepper     Summer     Gourmet     Fat Free     Vegan     Vegetarian     Pescatarian     Dairy Free     Wheat/Gluten-Free     Peanut Free     Tree Nut Free     Soy Free     Kosher

Yield Makes about 3/4 cup

Number Of Ingredients 5

1/4 cup water
1/4 cup sugar
1/2 cup rice vinegar (not seasoned)
3/4 teaspoon salt
1/2 teaspoon sambal oelek (chile garlic sauce) or 1/2 teaspoon dried hot red pepper flakes

Steps:

  • Bring water and sugar to a boil in a small saucepan over moderate heat, stirring until sugar is dissolved. Remove from heat and stir in rice vinegar, salt, and sambal oelek. Cool sauce, then chill, covered, at least 1 hour.

Tips:

  • For perfectly crispy plantain chips, choose green or just-turning-yellow plantains. These are less sweet and have a higher starch content, which makes them crispier when fried.
  • Slice the plantains thinly and evenly. This will help them cook evenly and prevent them from sticking together.
  • Don't overcrowd the pan when frying the plantains. This will cause them to steam instead of fry and result in soggy chips.
  • Use a deep fryer or a large saucepan with high sides to fry the plantains. This will prevent oil splatters and make it easier to control the temperature of the oil.
  • Fry the plantains in batches until they are golden brown and crispy. Drain them on paper towels to remove excess oil.
  • Serve the plantain chips immediately with your favorite dipping sauce. They are best enjoyed warm and crispy.

Conclusion:

Crispy plantain chips are a delicious and easy-to-make snack or side dish. They are perfect for parties, potlucks, or just enjoying at home. With just a few simple ingredients and a little bit of time, you can make your own delicious plantain chips that are sure to be a hit.
