SESAME ORANGE SHRIMP

Sesame Orange Shrimp image

Using egg whites instead of whole eggs (or yolks) in the batter creates a crispier coating; cooking the shrimp in batches (so as not to crowd the pan) also helps. This versatile recipe is equally delicious when prepared with sliced chicken breast, pork loin, or steak.

Time 20m

Number Of Ingredients 13

2 tsp sesame oil
1 large orange , zested and juiced
3 tbsp honey
2 tbsp low-salt soy sauce
1 tbsp rice vinegar
3 tbsp cornflour
2 tbsp sesame seeds
generous pinch of Chinese five-spice powder
300g raw king prawns
3 tbsp sunflower or vegetable oil
1 garlic clove , thinly sliced
2 spring onions , sliced
200g long-grain rice , cooked, to serve

Steps:

  • Mix the oil, orange zest and juice, honey, soy and vinegar in a bowl, then combine the cornflour, sesame seeds, five-spice and a pinch of salt in another bowl. Run a small knife down the back of each prawn, so they butterfly out as they cook, helping more sauce stick to them.
  • Toss the prawns through the cornflour mixture. Heat the oil in a large wok or frying pan. When it's very hot, add the garlic. Sizzle for 10 secs, but don't let it brown. Add the prawns and any flour and seeds left in the bowl. Stir-fry over a high heat for a few minutes, until the prawns are pink and the sesame seeds are golden. Tip the prawns onto a plate and pour the sauce mixture into the wok. Bubble for a few minutes until thickened. Add the prawns back to the wok and stir to coat in the sauce. Heat through for another 30 seconds. Top with spring onions and serve with rice.

Tips:

  • Use fresh prawns: Fresh prawns have a sweeter, more delicate flavor than frozen prawns. If you're using frozen prawns, thaw them completely before cooking.
  • Clean the prawns properly: Devein the prawns and remove the heads and tails. Rinse the prawns thoroughly under cold water.
  • Use a cornstarch coating: The cornstarch coating helps to create a crispy shell on the prawns. Make sure to coat the prawns evenly in the cornstarch.
  • Fry the prawns in hot oil: Heat the oil to 350 degrees Fahrenheit before adding the prawns. This will help to ensure that the prawns cook evenly and quickly.
  • Don't overcrowd the pan: When frying the prawns, don't overcrowd the pan. This will cause the prawns to steam instead of fry.
  • Serve the prawns immediately: Sesame prawns are best served hot and crispy. Serve them with your favorite dipping sauce.

Conclusion:

Crispy sesame prawns are a delicious and easy-to-make appetizer or main course. They're perfect for a party or a weeknight meal. With a few simple tips, you can make crispy sesame prawns that are sure to impress your friends and family.
