1/2 cup dark chocolate chips

3/4 cup cold unsalted butter, cut into 1/2-inch cubes
2 large eggs
1/2 cup buttermilk or heavy cream

Steps:

2 cups boiling water
2 cups/250 grams all-purpose flour, plus more for dusting the work surface
1/4 to 1/3 cup/50 to 66 grams granulated sugar, plus more for sprinkling
1 tablespoon baking powder
3/4 teaspoon fine sea salt
1/4 teaspoon baking soda
1/2 cup/113 grams very cold unsalted butter
1/3 cup buttermilk, plus more for brushing
1 large egg, beaten
