Shortcut Slow-Cooker Apple Cider image

This homemade cider couldn't be easier: Cut a dozen of your favorite apples into wedges -- skins, seeds, stems and all -- and add to a slow cooker with some spices and water. A bonus: your house will smell delicious too!

Provided by Food Network Kitchen

Categories     beverage

Time 6h15m

Yield 12 cups

Number Of Ingredients 5

6 large tart apples, such as Granny Smith (about 2 pounds)
6 large sweet apples, such as Gala (about 2 pounds)
12 whole cloves
6 cinnamon sticks
1/2 to 1 cup packed light brown sugar

Steps:

  • Thoroughly wash and dry the apples. Cut each apple into 8 wedges (skins, seeds and stems included) and transfer to a 7-quart slow cooker. Add the cloves, cinnamon sticks and 12 cups water. Cook on high, covered, for 4 hours.
  • Remove the lid and carefully crush the apples with a potato masher. Cover again and cook on high for another 2 hours.
  • Set a large, fine-mesh strainer over a large stockpot. In batches, ladle the apple mixture into the strainer and use the back of the ladle to press down on the apple pulp to extract the liquid. Discard the pulp. Stir in 1/2 cup of the brown sugar until completely dissolved. Taste and add additional sugar if needed.
  • Serve the apple cider hot or allow it to cool fully, then serve it chilled over ice.

Time 8h10m

Number Of Ingredients 8

6 quart slow cooker (reduce the amounts for a smaller cooker)
8-10 medium size sweet apples (I like McIntosh, Empire, Golden Delicious, Pink Lady, and Braeburn, do NOT use Red Delicious apples)
1 orange
3 cinnamon sticks

sweetener of choice, up to 1 cup (granulated sugar, brown sugar, honey, maple syrup, or combo)

Steps:

  • Chop apples and orange into large chunks keeping the peels on.
  • Put apples, orange, cinnamon, cloves, allspice, ginger in the slow cooker.
  • Fill the slow cooker with enough water to cover all of the apples. It should fill it pretty much to the brim of the pot.

  • Allow to brew for 8-12 hours. (12 hours is best and even longer would be fine too!)
  • Take a potato masher and mash all of the apples up. Strain the cider through a fine mesh sieve or through cheesecloth for a more clear cider.

Categories     Slow Cooker

Time 10h20m

Number Of Ingredients 7

12 apples, peeled and cored
10 cups water
1 orange, peeled
1 tbsp cloves whole
2 cinnamon sticks
1 teaspoon nutmeg
2/3 cup brown sugar

Steps:

  • Add all the ingredients to a slow cooker.
  • Cover with lid and cook on low for 8-10 hours (overnight is perfect) or on high for 3-4.
  • After everything is cooked and the apples are soft, mash with a potato masher until everything is nice and mushy.
  • Place a regular-sized strainer into a large pot and carefully pour the contents of the slow cooker through it. You can smoosh extra juice through with a spoon or the potato masher. This will separate most of the solids from the liquid.
  • Then, pour the contents in the pot back into the slow cooker through a fine strainer. This will catch any bits and pieces that may have snuck through.
  • Keep on warm and serve!

SLOW COOKER APPLE CIDER BRAISED PORK

Slow Cooker Apple Cider Braised Pork image

This pork shoulder recipe combines pork shoulder with apple cider in a slow cooker, where it is cooked for several hours until tender. Reduce the cooking liquid to create a thick and flavorful sauce you can pour over the sliced pork.

Provided by Chef John

Categories     Meat and Poultry Recipes     Pork     Pork Shoulder Recipes

Time 7h

Yield 8

Number Of Ingredients 13

1 (4 pound) boneless pork shoulder roast
salt and freshly ground black pepper to taste
1 tablespoon vegetable oil
2 shallots, sliced
1 rib celery, chopped
½ cup apple cider vinegar
2 ½ cups apple cider
4 cloves garlic, peeled
1 bay leaf
1 ½ teaspoons Dijon mustard
1 pinch cayenne pepper, or more to taste
2 tablespoons cold butter, cut into small pieces
1 tablespoon chopped fresh herbs (Italian parsley, sage, or thyme)

Steps:

  • Season pork with salt and black pepper. Heat oil in a large skillet over high heat. Sear pork on all sides in the hot oil until browned, about 3 minutes per side. Transfer pork to the slow cooker.
  • Reduce stovetop temperature to medium; cook and stir shallots and celery in the skillet until they begin to soften, 3 to 4 minutes. Pour in apple cider vinegar and cook, scraping up any browned bits, until liquid is nearly evaporated, 4 to 5 minutes.
  • Pour shallot mixture over pork shoulder in the slow cooker. Add apple cider, garlic cloves, and bay leaf. Cover, set slow cooker to Low, and cook until fork-tender but not falling apart, about 6 hours. Turn pork over every 1 to 2 hours. Remove pork roast to a plate and cover loosely with foil.
  • Pour remaining liquid from the slow cooker through a fine mesh strainer into a large saucepan; place over high heat. Discard bay leaf and other solids. Bring sauce mixture to a boil, decrease heat and cook, skimming fat from the top, until reduced to 1/4 of the original volume, about 10 minutes.
  • Remove sauce from heat and stir in Dijon mustard and cayenne pepper. Slowly whisk in cold butter until incorporated. Sprinkle in fresh herbs and season with salt and black pepper to taste.
  • Cut pork into 1/4-thick slices and serve with sauce poured over the top.

Tips:

  • Use a variety of apples: Use a mix of sweet and tart apples for the best flavor. Some good options include Granny Smith, Honeycrisp, and Braeburn.
  • Don't peel the apples: Peeling the apples will remove some of the flavor and nutrients. Plus, the peels add a beautiful color to the cider.
  • Add spices: Spices like cinnamon, nutmeg, and cloves will add a warm and inviting flavor to the cider. You can also add a bit of brown sugar or honey for sweetness.
  • Use fresh ginger: Fresh ginger will add a spicy and refreshing flavor to the cider. If you don't have fresh ginger, you can use ground ginger, but it won't be as flavorful.
  • Let the cider simmer: Simmering the cider for several hours will allow the flavors to meld and develop. You can simmer the cider on the stovetop or in a slow cooker.

Conclusion:

Apple cider is a delicious and refreshing drink that can be enjoyed all year round. It's perfect for a fall gathering or a winter holiday party. And with the addition of hard cider, it can also be a festive and fun cocktail. So next time you're looking for a warm and comforting drink, give this crock pot apple cider a try. You won't be disappointed!
