This dip is an absolute hit everytime I make it! My husband and all of our friends devour it and it's always the first to go! It has a nickname of "white trash dip". I make it in a round 4 quart crock pot, but the recipe can be halved or doubled for smaller or larger crock pots.

4 (8 ounce) packages Philadelphia Cream Cheese
2 (16 ounce) packages jimmy dean original breakfast sausage
1 (10 ounce) can original Rotel tomatoes & chilies
1 (10 ounce) can hot Rotel tomatoes & chilies
tortilla chips

Steps:

  • Brown both packages of sausage in a skillet over medium heat.
  • Drain the sausage in a colander.
  • Cube the cream cheese into a crock pot.
  • Add the sausage to the cream cheese in the crock pot.
  • Add both cans of rotel (with the juice) to the crock pot.
  • Heat the mixture in the crock pot on high heat for approximately 1 hour, stirring occasionally until the dip is well mixed.
  • Reduce heat to warm/low and serve with tortilla chips.

1 lb sausage (chorizo works well, too)
32 ounces Velveeta cheese, cut into cubes
2 (28 ounce) cans Rotel Tomatoes (for added spice use the "Extra Hot" flavor)

Steps:

  • Crumble sausage and brown in skillet.
  • Place Velveeta and Rotel into a crock pot and heat on high.
  • Once sausage is browned, add it to the crock pot.
  • Continue heating on high, stirring occasionally, until cheese has melted.
  • Turn heat down to low, get out the tortilla chips and beer, and enjoy the ballgame.
  • This recipe works as a sauce as well.
  • If you are having a large get-together, I recommend doubling the recipe, it's usually the life of the snack buffet.

16 ounces Velveeta cheese
2 (10 ounce) cans ro*tel diced tomatoes and green chilies
1 (10 ounce) can hormel chili
2 cups shredded mexican cheese

Steps:

  • Cut Velveeta into 2 inch cubes. Place cubes into crock pot with the Ro*tel, chili and shredded cheese. Mix together. Turn crock pot on Low setting and cover, stirring occasionally. When all cheese is completely melted, it's time to enjoy!
  • (It usually takes an hour and a half or so on Low temp, but if you need it quicker, use High temp, but watch it and stir often to prevent burning).
  • If your crock pot has a "Keep Warm" setting use that after the cheese is melted. Serve warm.

I used to go to a friends house on sundays to watch football, and every time I would make a different chip dip in the crock pot. Eventually this one was requested every week! It's pretty spicy. If you want it a little more mild, I suggest using less of the spicy ingredients (regular sausage, regular rotel, minimal peppers) rather than excluding them entirely. All ingredients combine to MAKE the cheese dip :) I use the maximum amount of each ingredient I have listed.

1 lb spicy Jimmy Dean sausage
32 ounces Velveeta cheese
16 ounces hot rotel (2 cans)
1 -2 fresh habanero, chillis
1 -3 fresh jalapeno
12 ounces salsa

Steps:

  • Start browning the sausage in a skillet, breaking it into small pieces as you would for tacos.
  • Cut the cheese into cubes and throw them in the crock pot with the 2 cans of DRAINED Hot Rotel. You can go ahead and turn it on to get the melting process started.
  • When the sausage is fully cooked, drain the fat and add it to the crock pot.
  • Prepare yourself and your kitchen for cutting hot chillis/peppers. You do not want to touch anything that you dont need to, ESPECIALLY the cover to the crock pot, because it will get on everyone so just leave it off. Wash your hands several times afterwards.
  • Chop/dice the jalapenos fairly well, and the habeneros VERY well. Add to crock pot. As long as you leave about 2 hours for the peppers to cook in the cheese, the actual pepper pieces will not be much spicier than the dip itself.
  • Stir occasionally, and implement step 7 as needed.
  • The salsa is a trick I use for any cheese dip. Because you've used fresh peppers and drained the rotel, the dip will be thick. The salsas primary role is thickness control. You can always thin out a dip, but it takes a long time to thicken one out. Just add a spoon full at a time until it's just right. After it sits out for a while it might need more.
  • Throw in something new and let me know! I think some beans would go in nicely, or some chili.

1 lb mild sausage
2 lbs Velveeta cheese
16 ounces salsa
10 ounces cream of mushroom soup

Steps:

  • Place cheese, salsa & mushroom soup in a 5qt crock pot on low heat.
  • Cook sasage & beef until brown then drain.
  • Once the cheese has melted add the meat to the pot.
  • Stir the dip about ever 10-15mins as its cooking to preven scortching.
  • Serve with tortilla chips or Ritz crackers.
  • Note: for you picky eatters -- i promise you cant taste the cream of mushroom. ;o) This recipe can be altered in several ways. This is just the way i like it. I do sometimes add about 1/4 cup of milk to thin out the dip a little. Hope you enjoy it as much as i do!

2 boneless skinless chicken breasts, frozen
1 (10 1/2 ounce) can Rotel tomatoes & chilies, do not drain
1/2 cup water
1 lb Velveeta cheese, cubed
1/2 teaspoon onion powder
1/4 teaspoon garlic powder
2 tablespoons flour
4 ounces light sour cream
tortilla chips

Steps:

  • Blend the tomatoes & chilies in a food processor then pour into a crock pot. Add the water & frozen chicken breasts, cover with a lid & cook on low for 3 hours.
  • Remove the chicken & shred, place back into the crock pot. Stir in the Velveeta & spices.
  • Mix the flour with a small amount of water. Stir into the crock pot & recover with a lid. Cook for another hour.
  • Turn off the pot then stir in the sour cream. Serve warm with tortilla chips.

16 ounces cheese spread (Cheese Whiz)
8 ounces cream cheese
1 (14 ounce) can rotel
8 ounces smoked sausage (pre-cooked)

Steps:

  • Microwave the smoked sausage for 3-4 minutes.
  • Cube the cream cheese in small cubes for better melting.
  • Combine the cream cheese cubes, the cheese whiz, and the rotel in the crock pot, mixing thoroughly.
