The only prep work is a little chopping--the crock pot does the rest and in only a few hours. No broccoli or cheese (unless you want to add them, but it doesn't need it). I double the curry powder since we have strong palates.

4 boneless skinless chicken breasts
1 (10 3/4 ounce) can cream of chicken soup (or Healthy Substitute for Cream of Chicken Soup)
1 cup mayonnaise
1/4 cup lemon juice
1 teaspoon curry powder
2 stalks celery
1 small onion

Steps:

  • Cut chicken, celery and onion into bite-size pieces and put in crock pot.
  • Add rest of ingredients and stir to combine well.
  • Cover and cook on high for 2-3 hours or low for 6-8 hours.
  • Serve over rice or noodles.

4 boneless chicken breasts
1 stick butter
1 can(s) cream of chicken soup
1 c mayonnaise
1/4 c lemon juice
2 stalks of celery optional
1 small onion
1 (8oz) tillamook cheddar cheese
2 cups of frozen broccoli
1 dash(es) salt and pepper
bread crumbs at the end

Steps:

  • 1. Place 4 boneless chicken breasts in the crock pot. Add a stick of butter.
  • 2. Place one can of chicken soup in the pot.
  • 3. Add 1 cup of mayonaise and your lemon.
  • 4. Add 2 stalks of celery
  • 5. Add one cut up small onion.
  • 6. 1 block or 5 oz of tillamook cheddar cheese or quality brand of cheese with a high fat content.
  • 7. If your crock pot is small 1 1/2 cups of broccoli is all you need. A large crock pot add 2 cups of broccoli
  • 8. Will be done in 4 hours. Than add breadcrumbs on top if you wish. Mix butter with breadcrumbs place on top.

Tips:

  • For a creamy casserole, use 1 cup of milk or cream.
  • For a veggie-packed casserole, add 1 cup of chopped broccoli or cauliflower.
  • For a cheesy casserole, sprinkle 1 cup of shredded cheddar cheese on top before baking.
  • For a crispy topping, crush 1 cup of cornflakes or potato chips and sprinkle on top before baking.
  • If you don't have a crock pot, you can make this casserole in the oven at 350 degrees Fahrenheit for 45 minutes.
