¼ cup cornstarch
1 teaspoon ground black pepper
2 pounds boneless skinless chicken breast halves, cut into 1-inch pieces
1 tablespoon canola oil
1 cup roasted unsalted cashews
¾ cup reduced-sodium soy sauce
⅓ cup rice wine vinegar
⅓ cup ketchup
3 tablespoons sweet chili sauce
2 tablespoons dark brown sugar
5 cloves garlic, minced
1 tablespoon grated fresh ginger
½ teaspoon red pepper flakes
2 teaspoons toasted sesame oil
4 green onions, sliced diagonally

Steps:

  • Combine cornstarch and pepper in a resealable plastic bag. Add chicken pieces and shake bag to coat with cornstarch mixture.
  • Heat oil in skillet over medium-high heat. Brown chicken about 2 minutes on each side. Transfer to a multi-functional pressure cooker (such as Fagor®).
  • Combine cashews, soy sauce, rice vinegar, ketchup, sweet chili sauce, brown sugar, garlic, ginger, red pepper flakes, and sesame oil in a bowl. Pour over chicken.

1 (7 ounce) can tuna in water, drained & flaked
1 cup celery, diced
1/2 cup onion, minced
3 tablespoons margarine
1 (10 1/2 ounce) can cream of mushroom soup
1 (16 ounce) can Chinese vegetables or 1 (16 ounce) can bean sprouts, drained
1 tablespoon soy sauce
1 cup cashews, coarsely chopped
2 cups crisp chow mein noodles (or to taste)

Steps:

  • Combine all ingredients except chow mein noodles in a crock pot.

1 medium onion, chopped
1 medium sweet pepper, chopped
1 teaspoon salt, divided

2 garlic cloves, minced
1/4 cup all-purpose flour
2 cups reduced-sodium chicken broth
2 cups half-and-half cream
4 cups uncooked egg noodles (about 6 ounces)
3 cans (5 ounces each) light tuna in water, drained
2 tablespoons lemon juice
2 cups shredded Monterey Jack cheese
2 cups frozen peas, thawed
2 cups crushed potato chips

Steps:

  • In a large skillet, melt butter over medium-high heat. Add mushrooms, onion, sweet pepper, 1/2 teaspoon salt and 1/2 teaspoon pepper; cook and stir until tender, 6-8 minutes. Add garlic; cook 1 minute longer. Stir in flour until blended. Gradually whisk in broth. Super easy and even my 2-year-old ate it! It makes a very soft pasta, not al dente.
