¼ cup all-purpose flour
1 (2 1/2 pound) boneless beef chuck roast
1 pinch salt and ground black pepper to taste
1 (1.2 ounce) package dry beef gravy mix
1 (1 ounce) package ranch dressing mix

SLOW COOKER POT ROAST

Slow Cooker Pot Roast image

Taking the time to make a smooth, thick gravy for this slow-cooked dinner is worth it. As the pot roast cooks, the water and juices from the vegetables and meat will thin the gravy out, creating just the right consistency.

Time 8h50m

Yield 8 to 10 servings

Number Of Ingredients 15

One 4-pound beef chuck roast
Kosher salt and freshly ground black pepper
1/3 cup all-purpose flour, plus more for coating
3 tablespoons olive oil
4 medium carrots, cut into 2-inch pieces
3 stalks celery, peeled and cut into 2-inch pieces
1 medium onion, cut into 1/2-inch wedges
3 cloves garlic, mashed
3 tablespoons tomato paste
1 cup red wine
3 cups low-sodium beef broth
3 bay leaves
2 sprigs fresh thyme
1/2 teaspoon ground allspice
1/2 cup loosely packed parsley leaves, chopped

Steps:

  • Sprinkle the roast all over with 2 1/2 teaspoons salt and 1 1/2 teaspoons pepper. Coat in flour and shake off any excess. Heat 2 tablespoons of the oil in a large nonstick skillet over medium-high heat. Add the roast to the skillet and cook until golden brown on all sides, about 8 minutes, turning as needed. Transfer the roast to the insert of a 6-quart slow cooker, along with the carrots, celery, onions and garlic.
  • Add the remaining 1 tablespoon oil to the skillet over medium heat. Add the tomato paste and stir until the oil begins to turn brick-red, about 1 minute. Add the flour and wine and whisk until thick (it's OK if there are some lumps). Add the beef broth, bay leaves, thyme, allspice, 1/2 teaspoon salt and a few grinds of pepper and bring to a simmer, whisking, until the gravy is smooth and thickens slightly, about 4 minutes.
  • Pour the gravy into the slow cooker. Cover and cook on low for 8 hours. The roast and vegetables should be tender.
  • Remove the roast and let rest for a few minutes. Discard the thyme stems and strain the vegetables, reserving the gravy. Toss the vegetables with half the parsley and season with salt and pepper. Stir the remaining parsley into the gravy and season with salt and pepper. Slice the roast against the grain. Serve the meat and vegetables on a platter, moistening them with some of the gravy; serve the remaining gravy on the side.

Time 6h30m

Yield 8 serving(s)

Number Of Ingredients 13

1 tablespoon vegetable oil
1 (3 -4 lb) beef roast
2 onions, thinly sliced
4 stalks celery, peeled and thinly sliced
2 garlic cloves, minced
1/2 teaspoon dried thyme leaves
1 teaspoon salt
1/2 teaspoon cracked black peppercorns
1/4 cup flour
1 (10 ounce) can condensed beef broth
1 bay leaf
1 -2 green pepper, seeded and finely chopped
3 tablespoons steak sauce

  • In a nonstick skillet, heat oil over medium high heat. Pat roast dry with paper towel and brown in skillet on all sides. Transfer to slow cooker.
  • Reduce heat to medium. Add onions and celery and cook, stirring until softened. Add garlic, thyme, salt and pepper and cook, stirring for one minute. Add flour and cook, stirring for 1 more minute. Add beef broth and bay leaf and cook, stirring until thickened.
  • Pour mixture over roast. Cover and cook on low for 10-12 hours or on high for 5-6 hours, until meat is tender. Stir green peppers and steak sauce into gravy. Cover and cook on high for 30 minutes until peppers are soft. To serve, discard bay leaf, place roast on platter and spoon sauce over.
  • Enjoy!

Tips:

  • Choose the right cut of meat: Look for a chuck roast or rump roast, which are well-suited for slow cooking and become tender and flavorful when braised in the Crock-Pot.
  • Brown the meat before cooking: Searing the meat in a hot pan before adding it to the Crock-Pot helps to develop a rich, caramelized crust and adds depth of flavor to the dish.
  • Use a flavorful cooking liquid: Broth, wine, beer, or tomatoes all make excellent bases for the cooking liquid. Add some herbs, spices, and vegetables to create a flavorful braising liquid that will infuse the meat with flavor.
  • Cook on low and slow: The key to tender, fall-apart pot roast is to cook it on low heat for a long period of time. This allows the connective tissues in the meat to break down and the flavors to meld together.
  • Don't overcrowd the Crock-Pot: Make sure there is enough space in the Crock-Pot for the meat and vegetables to circulate and cook evenly.

Conclusion:

With a few simple tips and tricks, you can create a delicious and comforting pot roast in your Crock-Pot. Experiment with different cooking liquids, vegetables, and herbs to create a dish that suits your taste. Whether you serve it over mashed potatoes, rice, or noodles, pot roast is a classic comfort food that is sure to please everyone at the table.
