I love Crock pot recipes, and this one looks like a real winner! It's supposed to have a great sweet and sour flavor. I plan on trying this soon using boneless, skinless breasts. I found this on another website, and the serving size is an estimate.

6 -8 boneless skinless chicken thighs
1 onion, chopped
2 cups baby carrots
1 (6 ounce) can frozen lemonade concentrate, thawed
1/4 cup ketchup
3 tablespoons brown sugar
1/4 cup water
1/2 teaspoon salt
1/4 teaspoon pepper
2 tablespoons cornstarch
3 tablespoons water

Steps:

  • Place onions and carrots in bottom of 3-4 quart crock pot; top with chicken thighs.
  • Combine remaining ingredients except for cornstarch and 3 Tbsp water in small bowl and blend well; pour into crock pot.
  • Cover and cook on low for 8-9 hours until chicken is tender.
  • Remove chicken from crock pot and shred, using two forks; return to crock pot.
  • In small bowl, combine cornstarch and 3 Tbsp water and blend well; add to crock pot along with shredded chicken.
  • Stir and cook on high for 15-20 minutes until liquid is thickened.
  • Serve over hot cooked rice or couscous.

½ teaspoon salt
¼ teaspoon ground black pepper
2 pounds skinless, boneless chicken breast halves
2 tablespoons butter
¼ cup water
3 tablespoons fresh lemon juice
2 cloves garlic, minced
1 teaspoon chicken bouillon granules
1 teaspoon chopped fresh parsley

Steps:

  • In a bowl, mix the oregano, salt, and pepper. Rub the mixture into chicken. Melt the butter in a skillet over medium heat. Brown chicken in butter for 3 to 5 minutes on each side. Place chicken in a slow cooker.

1 whole chicken, based on the size of your slow cooker - a 1.3kg chicken should just about fit into a 3.5L slow cooker - while a 6.5L would probably fit a 2kg chicken
4 lemons
10 cloves garlic, 8 whole and 2 halved
4 sprigs fresh rosemary
salt

Steps:

  • Remove any giblets etc. from the cavity of the chicken, sometimes in a small bag.
  • Stuff chicken with 1 sprig of rosemary, 1 lemon (quartered) and 4 cloves garlic.
  • Season all sides of the chicken with salt and pepper.
  • Remove both ends of a lemon, cut in half to create very thick slices.
  • Line the bottom of the slow cooker with 4 lemon slices, 4 whole garlic cloves and a sprig of rosemary.
