This is a recipe that was derived from Miss Annie's Crock Pot Cream Cheese Chicken that I attempted to make but found that I didn't have exactly the right ingredients...Since my kids love ranch dressing, this version really "hit home" with them...(They were literally "licking their plates" after they were done!) I thank you so much, Miss Annie, for your inspiration for this "alternative ranch-flavored" recipe! :)

4 boneless skinless chicken breasts
2 tablespoons butter, melted
1 (10 3/4 ounce) can cream of chicken soup
8 ounces cream cheese, cubed
1/2 cup chicken broth
1 (1 ounce) package hidden valley ranch dressing mix
1/4 teaspoon minced garlic
1 dash paprika
1/8 teaspoon dried oregano
1/4 teaspoon dried parsley flakes

Steps:

  • Wash and dry chicken breasts and place them evenly in crock pot. Sprinkle with paprika.
  • Sprinkle pkg. of Hidden Valley Ranch salad dressing mix over chicken.
  • Drizzle chicken breasts with 1 tablespoons melted butter.
  • Cover and cook on Low for 4 hours.
  • Melt remaining 1 tablespoon butter in a medium saucepan along with minced garlic and saute slightly.
  • Add cream of chicken soup, the 8 oz. of cream cheese cubes, 1/2 cup chicken broth, dried Oregano and dried Parsley flakes. Stir on medium heat until smooth.
  • Add mixture to crock pot, cover again and continue to cook on low for 1 1/2 hours to 2 hours.
  • Serve over buttered egg noddles.

4 -6 red potatoes (use 4 if your potatoes are large, 6 if they are small)
2 cups baby carrots
4 shallots, sliced
4 chicken breasts, bone in and skin removed. (If you use boneless, decrease cooking time)
6 ounces pesto sauce
1 ounce Hidden Valley Original Ranch Dressing Mix
1/2 cup chicken broth (can use as little as 1/4 C)

Steps:

  • Cut the potatoes in half if they are small or into quarters if they are large.
  • Put the potatoes, baby carrots and shallots into the bottom of the crock pot.
  • Place the chicken breasts on top of the vegetables.
  • In a small bowl, mix together the pesto and chicken broth with the packet of Hidden Valley Ranch Salad Dressing and Seasoning Mix until completely combined.
  • Pour the pesto/ranch mixture over the chicken and vegetables.
  • Mix everything together so the sauce covers all ingredients.
  • Put the lid onto your crock pot and cook on low for 6-8 hours.

1 tablespoon vegetable oil
2 lbs round steaks (see note)
2 onions, thinly sliced
3 garlic cloves, minced
1 teaspoon salt
1 teaspoon black peppercorns, cracked
1/4 cup all-purpose flour
3/4 cup chicken stock
1 teaspoon paprika
1/4 teaspoon cayenne pepper
1/4 cup whipping cream
1 -2 jalapeno pepper, finely chopped
mashed potatoes, hot and fluffy

Steps:

  • In a skillet, heat oil over medium high heat for 30 seconds. Add steak, in pieces, if necessary, and brown on both sides. Transfer to slow cooker stoneware.
  • Reduce heat to medium. Add onions to skillet and cook, stirring, until softened, about 3 minutes. Add garlic, salt and peppercorns and cook, stirring, for 1 minutes. Sprinkle flour over mixture and cook, stirring, for 1 minute. Add stock and cook, stirring, until thickened. Sauce will be very thick.
  • Spoon sauce over meat in slow cooker, cover and cook on LOW for 8 hours or on High for 4 hours, until meat is tender.
  • In a small bowl, combine paprika and cayenne. Gradually add cream, mixing until blended. Add to stoneware along with jalapeno pepper. Cover and cook on HIGH for 15 minutes, until flavors meld. Serve with hot, fluffy mashed potatoes.
  • TIP: While round steak is traditionally used for this dish, an equally successful version can be made with "simmering steak." This is cut from the blade or cross rib and is available at many supermarkets. Serves 6.

1 pkg hidden valley ranch dry dressing mix
