This is a great recipe that I use when I need a lot of moist flavorful cooked chicken/turkey. It's great for salads, enchiladas etc. The breast is even moist enough to slice up and serve for dinner or put on sandwiches.

6 -6 1/2 lbs turkey breast
2 teaspoons vegetable oil
salt and pepper
1 medium onion
4 garlic cloves

Steps:

  • Rinse the turkey and pat it dry with paper towels.
  • Rub turkey all over with the oil.
  • Carefully pull back skin over breast and rub with seasonings.
  • Place breast, meaty side up into a 5 quart slow cooker.
  • Peel the onion, cut it into quarters and place around the edges of the pot.
  • Peel the garlic cloves and place around the sides of the cooker (maybe rub some minced under the skin).
  • Cook for 9 hours if frozen or 7 ½ hours if not frozen on low or to 170 degree internal temperature.
  • Let bird rest 10 minutes before carving.
  • Discard vegetables.

The next day I take the remaining turkey meat & make open faced turkey sandwiches (1 can Campbell's Turkey Gravy mixed with 1 can of Campbell's Mushroom Gravy in large skillet - heat on medium then add turkey meat, reduce heat & simmer on low until ready to serve on sliced bread).

5 1/2 lbs turkey breast (I use bone in but you can also use boneless)
1 large onion (sliced into 4 thick slices)
2 (14 1/2 ounce) cans chicken broth (I usually use College Inn)
salt
pepper
garlic powder
2 raw garlic cloves
extra virgin olive oil

Steps:

  • Wash & dry turkey breast. Leave skin on.
  • Rub entire breast with olive oil. Season entire breast with salt, pepper, & garlic powder (including under the skin). Top with 2 cloves of raw garlic.
  • Coat bottom of crock pot with olive oil.
  • Add the 4 thick slices of onion to crock.
  • Place turkey breast on top of the onion (onion makes a little shelf for breast so it does not stick to bottom of crock).
  • Add the 2 cans of broth to bottom of crock (try not to wash off the seasoning on the turkey breast).
  • Cover with lid & cook on high x 1 hr then low for 6-8 hrs (or just cook on low for 8-10 hrs.).

2 teaspoons poultry seasoning
3 (14 ounce) cans reduced-fat chicken broth
2 tablespoons butter

Steps:

  • Remove turkey from wrapper and set gravy packet in refrigerator for the time being.
  • Leave netting on turkey breast and keep the turkey in one piece; rub turkey down on both sides with poultry seasoning and set in crock pot.
  • Add 2 cans of chicken broth to the crock pot, set to low, and cook for 8-10 hours.
  • At about the 5-6 hour mark, turn the turkey over, and add one more can of broth to the crock pot.

1 small onion, finely chopped
2 celery ribs, chopped
1/2 cup dried cranberries or 1/2 cup dried cherries

I love turkey, but if you don't want to cook a whole turkey, this can be a great alternative. I watch for turkey breasts to go on sale and pick one up for an easy dinner. You could also add in a turkey thigh as well. This is done right in the crock pot which makes this even easier. Slow cooked comfort food. The only thing I believe is a must if you are using the crock pot, is to lightly brown your turkey breast first. I just season with salt and pepper and pan sear on medium high in butter and olive oil until lightly golden brown.

3 1/2-4 lbs boneless turkey breast (you could also add a turkey thigh as well)
4 -5 carrots, cut in 1-inch pieces
12 red potatoes (small ones can be left whole, large ones should be cut in half)
2 large onions, rough chopped
2 teaspoons butter (to saute the turkey)
1 tablespoon olive oil (to saute the turkey)
1 1/2 cups broth
1/3 cup white wine
2 tablespoons fresh lemon juice
1 tablespoon fresh ginger, fine chopped
1 teaspoon ground coriander
1 tablespoon paprika
3/4 teaspoon ground allspice

Steps:

  • Turkey -- In a large saute pan on medium high heat, add the butter and olive oil and pan sear the turkey, just a few minute until lightly golden brown.
  • Crock Pot -- Transfer the turkey to the crock pot and add all the vegetables.
  • Broth -- Mix the broth and seasoning and pour over the turkey. I do use a bit more liquid then most crock pot dishes, but I love to thicken the sauce, it makes a great gravy.
  • Cook -- On low cook for approximately 7-8 hours, high 5-6.
  • Gravy -- Remove the turkey and vegetables from the crock pot and transfer to a serving platter. Cover with foil to let rest. Pour the juice from the crock pot into a small pot on the stove and stir in a slurry of (corn starch and water) to thicken the sauce. I add a little at a time to get it to the consistency I like best. I don't like my gravy too thick. You can strain the gravy if you want, but I don't find it necessary. I just use a hand held small strainer spoon to get out any small pieces. Add 1 teaspoon fresh parsley to finish the sauce.
  • Serve -- Slice up the turkey surrounded by the vegetables and potatoes and serve with a side of gravy. Leftover turkey and any gravy makes a great Hot Turkey Sandwich. So save those leftovers, or you can make a turkey has which is always good. ENJOY!

  • 1. Make sure your turkey is completely thawed. I let mine hang out in the fridge for a couple of days after I purchase it frozen. Set it on a pan, so you don't have juices running all over when you open up the bag. Cut a hole in the top of the bag and remove the packaging. Some turkey breasts come with a gravy pouch inside, be sure to remove it if yours happens to come with one. 2. Place the whole bird in the crock pot. 3. Pour yourself 1/2 cup of orange juice. Add one can whole berry Cranberry sauce and one package Lipton Onion Soup mix. 4. Mix the ingredients together and pour them over the top of the bird. 5. Sprinkle a bit of salt and pepper over the top. Cover the crock pot and cook on low for 8-9 hours, or until a meat thermometer stuck into the center of the bird reads 180 degrees. 6.   • 1. Spray crock pot with non-stick spray and turn on low
  • 2. Peel 4-6 carrots, wash, and cut to desired size
  • 3. Cut onion and place onion and carrot pieces into crock pot
  • 4. Sprinkle with salt and pepper and any other desired seasonings
  • 5. Remove the thawed turkey from package. Remove the netting and discard. Place the turkey on the veggies. There typically is a side that has a small fat layer. Place the fat side up.
  • 6. I used Butterball brand turkey which comes in a few flavors (Cajun, herb, dark meat, etc). There is an enclosed package of gravy. Open the package of gravy and pour over veggies and turkey.
  • 7. Cook on low for about 6-8 hours. After cooking I pour the liquid out of the crockpot into a saucepan, sprinkle with flour, heat up and make a gravy. Also, you can easily remove the piece of fat from the turkey breast.
  • 8. You can add potatoes, sweet potatoes, or any other veggies that tickle your fancy and they are equally delicious!

1/2 teaspoon marjoram

1 teaspoon creamed horseradish
1 large onion, diced
1/2 cup cold water

  • Wash turkey, drain, and place in 3-1/2 quart or larger crock pot, making sure that the lid will fit securely after turkey is added to crock pot.

Not liking the looks of the skin on my turkey breast, I removed it, then brined the turkey. Worried that it would dry out in the oven without the skin to protect it, I decided to use my slow cooker to cook it. I totally winged it so measurements are approximate, but I was so pleased with the ease of preparation and the results yielded that I had to post this. It makes the richest broth from the carrot, celery and onion that makes the tastiest gravy, and I am a huge gravy fan! And with the skin removed there was no need to skim fat from it. The carrots were delicious to eat too! I'm not sure if the brine was necessary, but I wanted a way to preserve it until I could cook it the next day, and it definitely helped to keep it moist and tasty. It wasn't salty, but I may brine skin-on next time and then remove it to see if there is a difference. I hope you enjoy it!

  • Remove skin if desired, and brine turkey the night before. (I used a mixture of water and apple juice to total 1 gallon, with 1 cup kosher salt, 1 cup of brown sugar, peppercorns, rosemary, dried thyme, cloves, bay leaves, allspice, garlic and sliced onion--but use any brine you like).
  • Rinse turkey thoroughly and pat dry.
  • Rub with olive oil, followed by seasonings and spices.
  • Place carrots, onion and celery in bottom of slow cooker.
  • Place turkey on top of vegetables.
  • Add enough stock to cover vegetables.
  • Cook on high 1 hour, and low until done, 3-6 hours depending on your slow cooker (mine cooks fast and too hot) and size of turkey (mine was 5 lbs). I checked the temperature after 3 1/2 hours and it was done at 165 degrees, but I kept it on warm until dinner since it was done much earlier than I expected.
  • Remove turkey and let rest while you make gravy.
  • To make gravy, measure 2 cups of broth from the slow cooker. Even though you only added about a cup or so of stock, the turkey and veg. make more juice. Careful, it's hot! I turned off my cooker about a half hour earlier so it wouldn't be as scalding.
  • Melt butter over med. heat and whisk in flour for 2-3 minute to make a blonde roux.
  • Slowly add stock while constantly stirring until desired consistency reached. Season with salt and pepper to taste, but taste it first because mine needed no salt.
