ROASTED PORK SHOULDER (PERNIL AL HORNO)

Roasted Pork Shoulder (Pernil Al Horno) image

Slow-cook Tyler Florence's Roasted Pork Shoulder (Pernil Al Horno) recipe from Food 911 on Food Network for flavorful, pull-apart meat for a special occasion.

Provided by Tyler Florence

Categories     main-dish

Time 7h

Yield 10 to 12 servings

Number Of Ingredients 7

1 boneless pork shoulder (about 4 pounds), skin on
4 garlic cloves, smashed
1 handful fresh oregano
4 tablespoons Kosher salt (1 tablespoon for every pound of meat)
1 tablespoon coarsely ground black pepper
3 tablespoons vegetable oil
2 tablespoons white wine vinegar

Steps:

  • Place the pork, fat-side up, in a roasting pan fitted with a rack insert, and using a sharp knife, score the surface of the meat with small slits. Mash the garlic, oregano, salt, and pepper into a paste on a cutting board with the flat side of a knife; place the adobo in a bowl and stir in the oil and vinegar. Rub the garlic paste all over the pork, being sure to get into the incisions so the salt can penetrate the meat and pull out the moisture - this will help form a crust on the outside when cooked. Cover the pork with plastic wrap and marinate in the refrigerator for at least 3 hours or up to overnight.
  • Allow the meat to sit at room temperature for 30 minutes before cooking. Preheat the oven to 350 degrees F.
  • Roast the pork for 3 hours, uncovered, until the skin is crispy-brown. Let the meat rest on a cutting board for 10 minutes before slicing.

This is a delicious way to cook pork. I got this recipe from my boyfriend who is from Puerto Rico. This also makes excellent, moist meat for Cuban sandwiches.

Provided by Michelle Figueroa

Categories     Pork

Time 15h30m

Yield 1 Roast

Number Of Ingredients 7

8 lbs picnic pork shoulder
12 minced garlic cloves
1 1/2 teaspoons dried oregano
1/2 teaspoon black pepper
3 tablespoons olive oil
3 tablespoons white vinegar
8 teaspoons salt (or 1 teaspoon of salt per pound of meat if you are using a smaller cut of meat)

Steps:

  • Wash the pork shoulder.
  • With a sharp knife, make 1 inch deep cuts into the pork.
  • With mortar and pestle crush garlic, oregano and black pepper together. Add olive oil, vinegar and salt. Mix well.
  • Spoon some of the garlic mixture inside the small cuts around the pork, and spread remaining mixture all over the pork.
  • Place pork in an aluminum turkey pan (skin side up); cover with aluminum foil tightly. Refrigerate at least 8 hours. (I have marinated this for as long as two days.).
  • Bake in pre-heated 325 degree Fahrenheit oven for about 5 to 6 hours.
  • Remove aluminum foil and bake at 375 degrees Fahrenheit for another hour or until skin is crisp. Closely watch this so you don't burn the skin (chicharrone).
  • Pork should be well-done and tender.

PALEO CROCK POT PORK SHOULDER PERNIL CARNITAS STYLE

PALEO CROCK POT PORK SHOULDER PERNIL CARNITAS STYLE image

Categories     Pork     Low Carb     Kid-Friendly     Quick & Easy     Wheat/Gluten-Free     Dinner

Yield 6 servings

Number Of Ingredients 11

3 to 3 1/2 lbs of pork shoulder
5-7 garlic cloves, minced
2 teaspoons of cumin
2 teaspoons of chili powder
2 teaspoons of black pepper
2 teaspoons of oregano
½ teaspoon of cayenne pepper
1/4 teaspoon of cinnamon
1 tablespoon of salt
juice of 1 lime
juice of 1/2 orange

Steps:

  • Trim the fat as much as possible from the pork shoulder. It is obviously ok to leave some on but if you can eliminate the big amounts of "white," it will save you later from separating the pork from the fat once the pork has been cooked. Also it cuts down on the saturated fat. Mix all your dry spices together and rub it into the flesh of the pork on all sides. Place dry rubbed pork in crock pot and add the minced garlic and the fresh squeezed lime and orange juices. Cook on low for 8-10 hours. Once cooked to your desired liking, shred all the pork off the fat and bone. This step was so easy; the pork was so moist it just fell off the bone. Optional: To make the pork seem more like carnitas preheat oven to Broil. Spread the pork on a cookie sheet and pour some of the remainder juices from the crock pot and cook for 5-10 minutes until the edges of the pork are browned.

Tips:

  • Choosing the right cut of pork: Select a pork shoulder roast, also known as pork butt or Boston butt. This cut is ideal for slow cooking methods like crockpots due to its marbling and connective tissues that break down during cooking, resulting in tender and flavorful meat.
  • Preparing the pork: Before placing the pork in the crockpot, trim off any excess fat to reduce the amount of grease in the final dish. Season the pork generously with a blend of spices, including salt, pepper, garlic powder, onion powder, cumin, oregano, and paprika. This will enhance the flavor of the meat.
  • Selecting the cooking liquid: The choice of cooking liquid adds depth and moisture to the pork. Options include water, chicken broth, or a combination of both. For a richer flavor, consider using a combination of broth and fruit juices like orange juice or pineapple juice.
  • Adding vegetables: Incorporate vegetables such as onions, garlic, carrots, celery, and bell peppers into the crockpot along with the pork. These vegetables will not only add flavor to the dish but also provide a colorful and nutritious complement to the meat.
  • Cooking time and temperature: Set the crockpot to the appropriate cooking setting and time. Generally, for a 3- to 4-pound pork shoulder, cook on low for 8-10 hours or on high for 4-6 hours. Check the internal temperature of the pork using a meat thermometer to ensure it has reached a safe internal temperature of 145°F (63°C) before serving.
  • Shredding the pork: Once the cooking time is complete, remove the pork from the crockpot and let it rest for a few minutes. Using two forks, shred the pork into bite-sized pieces. This allows for easier serving and creates a more tender texture.
  • Serving suggestions: Serve the shredded pork with a variety of sides such as rice, beans, tortillas, or bread. Accompany it with toppings like salsa, guacamole, sour cream, or cheese to create a delicious and satisfying meal.

Conclusion:

Crockpot pernil is a versatile and flavorful dish that is perfect for busy individuals or those who enjoy slow-cooked meals. With its tender and succulent pork, aromatic cooking liquid, and the addition of vegetables, this recipe offers a complete and satisfying meal. Experiment with different combinations of spices and cooking liquids to create a unique and personalized version of this classic dish. Whether served as a main course or as part of a larger spread, crockpot pernil is sure to impress family and friends.
