I modified this from a Food and Wine recipe--and I think it is a keeper! We like to have it with grilled ham and cheese (or just cheese for Lent). I especially like this as the seasoning is a little different and makes a nice change from our usual split pea and ham soup.

1 lb yellow split peas, rinsed
4 cups vegetable broth
2 cups water
6 ounces carrots, diced
1 medium sweet onion, diced
4 garlic cloves, minced
1/2 teaspoon ground pepper
1 1/2 teaspoons salt
2 teaspoons ground mustard
1/2 teaspoon dry oregano
1/8 teaspoon ground cloves
1/2 teaspoon celery seed

Steps:

  • Combine everything in a crockpot and cook on low for approximately 6-8 hours.

I made split pea and barley soup and was left with only a little bit of each left. I made Lentil soup, and was left with only a little bit of the bag left. I really, really wanted split pea soup tonight, so I decided to put a little bit of each in and see how it goes. I also added some turkey pepperoni instead of ham (so feel free to use whatever smoky meat you want) because...I didn't have any ham! The outcome was something unexpectedly delicious, and I think I'll be making this quite a bit in the future! By the way, each portion of this is 6 very filling Weight Watchers points (recalculating for the new system) without the turkey pepperoni. With the turkey pepperoni, it's 7.

4 ounces dried split peas
1 1/2 ounces barley
1 1/2 ounces brown lentils
3/4 cup turkey pepperoni (or any smoky meat you want, or omit completely!)
1 medium onion, chopped
1/4 cup carrot, diced
1 garlic clove, minced
2 bay leaves
1/4 teaspoon salt
1/4 teaspoon pepper
5 cups fat-free chicken broth

Steps:

  • In a slow cooker, layer every ingredient except the broth in order listed (do not stir). Boil broth, then add to slow cooker. Cover and cook on high for 4-5 hours or until vegetables are tender. 3Discard bay leaves before serving.

1 ham bone or meaty ham hocks
3 medium carrots ; peeled and sliced
1 medium onion ; chopped
2 stick celery + leaves ; chopped
2 clove garlic ; minced
1 bay leaf
1/4 c parsley ; chopped
1 Tbsp seasoned salt (or to taste)
1/2 tsp fresh pepper
1 1/2 qt hot water (6 cups)

Steps:

  • 1. Layer ingredients in the crock pot ; pour in water ; DO NOT STIR.
  • 2. Cover and cook on HIGH setting 4-5 hours or on LOW setting for 8-10 hours ; until the peas are very soft and the meat falls off the bone.
  • 3. Remove bone and bay leaf before serving.

3 Carrots peeled, sliced
1/2 cup Chopped onion
2 Celery ribs with leaves, chopped
2 Garlic cloves
1 Bay leaf
1/4 cup Fresh parsley chopped
1 tablespoon Seasoned salt
1/4 teaspoon pepper
1 1/2 quarts Hot water

  • Layer ingredients in slow cooker in the order given; pour in water. Do not stir ingredients. Cover and cook on HIGH 4 to 5 house or on low 8-10 hours until peas are very soft and ham falls off one. Remove bones and bay leaf. Mash peas to thicken if desired. Serve garnished with croutons. 1 tablespoon olive oil
2 onions, chopped
4 stalks celery, diced
4 carrots, peeled and diced
4 garlic cloves, minced
1 teaspoon oregano, dried
1/2 teaspoon cracked peppercorn
6 cups vegetable broth
salt
1 cup parsley, chopped
4 garlic cloves, minced
4 teaspoons red wine vinegar

Steps:

  • In a large pot combine split peas with 8 cups of water. Bring to a boil over medium high heat and boil for 3 minutes. Turn off heat and set aside for 1 hour. Drain and rinse. Set aside.
  • In a skillet over medium heat heat the oil and then add the vegetables (onions - carrots), cooking for 6-10 minutes or until vegetables are softened. Add garlic, oregano and pepper and cook for another minute, stirring. Transfer to crockpot.
  • Stir in reserved split peas and broth.
