1 large chicken breast, cut into 9 chunks
1 tsp rapeseed oil
1 small garlic clove , crushed
1 ½ tbsp smooth cashew nut butter
1 tsp reduced salt soy sauce
½ tsp honey
50ml coconut milk mixed with 2 tbsp water
basmati rice and steamed Tenderstem broccoli, to serve

Steps:

  • Heat the oven to 180C/160 C fan/gas 4. Feed the chicken chunks onto 3 lolly sticks. Arrange on a tray and cook in the oven for 8-10 mins or until cooked through.
  • Meanwhile, heat the oil in a small saucepan. Add the garlic and cook for one minute. Stir in the nut butter, soy sauce, honey and coconut milk. Warm through.
  • Serve the chicken lolly sticks with a spoonful of dip, Tenderstem broccoli and rice.

¾ cup creamy peanut butter
¾ cup coconut milk
4 spring onions, roughly chopped
3 cloves garlic, peeled
10 g ginger, peeled
2 fresh Serrano chilies, roughly chopped
1 teaspoon curry powder
1 teaspoon cumin
1 teaspoon turmeric
1 teaspoon salt
2 tablespoons soy sauce
1 lime, juiced
8 boneless, skinless chicken thighs, diced
⅓ cup peanuts, chopped
½ cup coconut milk
Bamboo or wooden skewer

Steps:

  • In a food processor, blend the peanut butter, coconut milk, spring onions, garlic, ginger, chilies, curry powder, cumin, turmeric, salt, soy sauce, and lime juice into a smooth paste; this should make about 2 cups. Reserve half of the marinade and pour the other half over the chicken thighs. Mix and chill for 2 hours or overnight.
  • Preheat the oven to 425˚F (220˚C). Line a baking tray with parchment paper.
  • Skewer the marinated chicken onto bamboo skewers, then arrange the skewers so their ends rest on the edges of the baking tray, allowing the chicken to be suspended. Bake the chicken skewers for 15-20 minutes, until slightly dark brown on the edges and cooked through.
  • With no oil in the pan, toast the chopped peanuts on low to medium heat, stirring constantly until the peanuts turn golden brown, 2-3 minutes. Add in the reserved marinade and the coconut milk. Stir and cook until thick and very aromatic, 5-10 minutes.

1 crocodile filets or 2 large chicken breasts, cut into thin strips
salt, to taste
fresh ground pepper, to taste
1/2 lemon, juice of
2 tablespoons olive oil
1 garlic clove, crushed
1 -2 tablespoon soy sauce
2 tablespoons crunchy peanut butter
4 ounces unsalted cashews, crushed (110 g)
1 limes, juice of or 1 lemon, juice of
0.5 (12 ounce) can coconut milk
fresh green chile, chopped (to taste)
splash soy sauce, to season
palm sugar (optional) or light muscovado sugar, to taste (optional)
8 -12 bamboo skewers or 8 -12 cocktail sticks, for assembling

Steps:

  • Soak the bamboo skewers or cocktail sticks in cold water for 10 minutes to prevent them from burning.
  • Season the crocodile or chicken generously with salt and freshly ground black pepper. Cut into strips about 1cm x 2cm (0.5in x 1in).
  • Mix together the marinade ingredients and marinate the crocodile or chicken strips for half an hour or longer if possible.
  • To make the satay sauce, combine all the satay sauce ingredients together in a small pan, adding just enough soy sauce to season. Add a little palm sugar or light brown muscovado sugar to sweeten, if necessary.
